2 cups chopped onions
2 tablespoons vegetable oil
3 cups chopped cabbage
1 fresh chili peppers, minced or 1/4 teaspoon cayenne
1 tablespoon grated fresh ginger
2 cups water
3 cups diced sweet potatoes (3/4 inch cubes)
salt
2 cups chopped fresh tomatoes
2 cups sliced okra, fresh or frozen
3 tablespoons fresh lime juice
2 tablespoons chopped fresh cilantro
chopped peanuts

Steps:

  • In a stock pot or soup pot, heat oil over medium heat; saute onions for 4-5 minutes.
  • Add the cabbage and chile or cayenne; saute, stirring often, for about 8 minutes or until the onion is transparent.

2 cups water
3 cups diced sweet potatoes, cut into 1/2inch cubes
Salt to taste
2 cups undrained chopped fresh or canned tomatoes
2 cups fresh or frozen sliced okra
3 tablespoons fresh lime juice
2 tablespoons chopped fresh cilantro
Chopped peanuts
Sprigs of cilantro (optional)

2 cups rice
1 green bell pepper
2 tablespoons margarine
2 cups frozen cut okra
1 (32 ounce) can stewed tomatoes
2 cups frozen black-eyed peas
1 (4 ounce) can diced green chili peppers
2 cups frozen corn
2 tablespoons dried thyme
3/4 teaspoon allspice

Steps:

  • Dice bell pepper.
  • Place large pot on medium-high heat and warm up margarine. When melted add bell pepper and okra. Cook until okra is no longer frozen.
