Time 1h55m

Yield 4 servings

Number Of Ingredients 13

4 slices smoked bacon or 1 small ham hock
4 cloves garlic, roughly chopped
1 cup dried red kidney beans, brought to a boil and cooled, drained
5 cups cold water
1 Scotch bonnet, halved and seeded, or 2 serrano chilis
1/4 teaspoon ground cinnamon
1 (14-ounce) can coconut milk
4 scallions, crushed*
2 sprigs fresh thyme
1/4 teaspoon ground allspice
1 tablespoon sea salt
1 teaspoon freshly ground black pepper
2 1/2 cups long-grain rice, washed and drained

Steps:

  • Heat a Dutch oven or large, deep pot over medium-high heat. Add the bacon to the hot pot and cook until light brown on both sides. Add the garlic and saute until light brown. Add the drained beans along with the cold water to the bacon and garlic and bring to a boil over high heat. Cover the pot, reduce heat to a simmer, and cook until beans are just tender, about 1 hour. Add the chili peppers, cinnamon, coconut milk, scallions, thyme, allspice, salt, and pepper and bring to a boil. Stir in the rice and, once the mixture has returned to a boil, stir, reduce the heat to low, cover and cook for 20 to 30 minutes, or until the rice is tender and has absorbed all of the liquid. Allow to sit for 15 minutes before serving. Remove the thyme sprigs and Scotch bonnet pepper halves and serve.

CARIBBEAN BAKED BEANS

Caribbean Baked Beans image

I clipped this recipe from the Wednesday, May 26th, 2004 edition of the Arizona Republic. This recipe is great because it uses black beans and is a fancy twist on traditional baked beans. Some may even call it "fusion cuisine". This dish can be mixed up, covered, and refrigerated up to 2 days before baking. I think this would be very good with seafood or chicken. This recipe is 3 points per serving. Ya Mon!

Tips for Cooking Caribbean White Beans

  • Soak the Beans: Soaking the beans overnight or for at least 8 hours helps to reduce cooking time and makes them more digestible.
  • Use a Large Pot: White beans tend to expand during cooking, so it's important to use a large pot to avoid overcrowding.
  • Add Aromatics: Enhance the flavor of your white beans by adding aromatic vegetables such as onions, garlic, and bell peppers while cooking.
  • Seasoning: Season the beans generously with a variety of herbs and spices. Common seasonings include thyme, bay leaves, salt, and pepper.
  • Simmer Slowly: Bring the beans to a boil, then reduce the heat to low and simmer gently until tender. This typically takes about 1-2 hours.
  • Check for Tenderness: Taste a bean to check for doneness. They should be soft and creamy on the inside.
  • Thicken the Broth: If desired, you can thicken the broth by mashing some of the beans against the side of the pot.
  • Serve with Sides: Caribbean white beans are often served with rice, stewed meats, or vegetables.

Conclusion

Caribbean white beans are a versatile and delicious addition to any meal. They are packed with protein, fiber, and essential nutrients. With their mild flavor and creamy texture, these beans can be used in a variety of dishes, from soups and stews to salads and side dishes.
