1 lb cooked mashed sweet potato (3 cups when mashed)
2 eggs
1/2 cup brown sugar, packed
1/4 cup butter, melted
2 tablespoons dark rum (optional)
1/2 teaspoon ground nutmeg
1 lime, juice of
1 lime, zest of
2 bananas, peeled, diced

6 large sweet potatoes
1 tablespoon cold butter, cut into pieces
2 teaspoons salt
6 firm bananas, sliced
2 (8 ounce) cans crushed pineapple
1 cup pineapple juice
1 teaspoon lemon juice
2 tablespoons honey

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C). Butter a 9x13-inch baking dish. Stir together the brown sugar and cinnamon until evenly blended; set aside.
