10 fresh sage leaves, chopped
Leaves from 3 sprigs fresh oregano, chopped
2 tablespoons kosher salt
2 tablespoons freshly ground black pepper
2 teaspoons garlic powder
One 4-pound chicken, cut into 8 pieces (split breasts, drumsticks detached, thighs trimmed)
8 ounces peach jam
2 to 3 tablespoons red pepper jelly

Steps:

  • Preheat the oven to 450 degrees F. Combine the sage, oregano, salt, pepper and garlic powder in a small bowl.
  • Line a baking sheet with foil. Pat the chicken dry with paper towels. Using your hands, coat the chicken with the herb rub, getting under the skin as well. Place the rubbed chicken on the baking sheet skin-side up and let sit for 1 hour at room temperature.
  • Combine the peach jam and red pepper jelly in a small pot and heat. Add more pepper jelly a little at a time to up the heat level, if desired.

3 to 4 onions, cut in wedges
3 to 4 cans beer, water or chicken stock if you've run out of beer
3 to 4 cloves garlic, minced
1 can golden mushroom soup
1 cup cream of celery soup
1 (12-ounce) bag egg noodle
olive oil
salt and pepper

Steps:

  • Saute garlic in 2-3 tablespoons of olive oil with your Dutch sitting over 10-12 briquets. Brown the chicken, then add the onions, three cans of beer, and the soup. Arrange 14-16 briquets around the outside of the lid and cook for 1-2 hours. If your birds are old, plan on having a little more charcoal to add in order to cook them longer. After about 2 hours remove the charcoal from the lid and take the lid off the Dutch. Add the last can of beer, or whatever you're using for cooking liquid, to just cover the pieces of chicken. Add the egg noodles and stir them enough so they're covered with liquid. Place Dutch back in the fire pan over 12-14 briquets for 20-30 minutes, but do not put any charcoal on the lid. 1 large onion or 2 small onions
1/2 cup olive oil (not extra-virgin)
2 teaspoons English mustard
1 tablespoon dried sage
Freshly ground black pepper
1 tablespoon Worcestershire sauce
1 lemon
1 (4-pound) chicken, jointed into 10 pieces
12 sausages
2 tablespoons fresh sage leaves, chopped

Steps:

  • Peel and cut the onion into eighths, and put into a freezer bag with the oil, mustard, dried sage, a good grinding of pepper, and Worcestershire sauce. Cut lemon in half, squeeze juice into bag, and then cut the halves into eighths and add them. Squidge everything around to mix (the mustard needs help to combine) and then add the chicken pieces. Leave to marinade in the refrigerator overnight, or for up to 2 days.
  • Preheat the oven to 425 degrees F. Allow the chicken to come to room temperature in its marinade.
  • Arrange the chicken pieces in a roasting tin skin side up with the marinade, including all the bits and pieces, and tuck the sausages around them. Sprinkle the fresh sage leaves over the chicken and sausages and then put the tin into the oven to cook for 1 hour and 15 minutes. Turn the sausages over half way through to color them evenly.
  • Arrange the chicken and sausages on a large platter.

4 lbs whole chickens (can use smaller but the cooking time is different then)
1 1/2-2 teaspoons lemon pepper
22 fresh sage leaves, finely chopped (must be be fresh, don't substitute!)
3 garlic cloves, pressed
6 tablespoons unsalted butter, softened
2 tablespoons chicken fat (chicken fat is better, but use olive oil if you don't have it, but not extra virgin) or 2 tablespoons olive oil (chicken fat is better, but use olive oil if you don't have it, but not extra virgin)
salt and black pepper
8 sprigs parsley
2 small onions, quartered
2 carrots, peeled and cut into 1-inch pieces
1 lemon, quartered

Steps:

  • Heat oven to 240°C (475°F).
  • Add butter, sage, lemon pepper and garlic in a bowl and combine.
  • Using your fingers and a small, sharp knife, loosen skin of chicken from breasts and thighs.
  • Slip butter mixture between skin and meat, spreading it evenly.
  • Brush skin with chicken fat or oil and season cavity with salt and pepper to taste.
  • Stuff with lemon, parsley, some of the carrots and 1 quartered onion.
  • Tie legs together with kitchen twine.

2 tablespoons olive oil
2 teaspoons salt

  • Grate 1 Tbs of peel and squeeze 3 Tbs juice from the oranges.

flour seasoned with generous amounts of paprika, garlic salt, onion salt and pepper

1 cup brewed coffee
1 (15-ounce) can tomato sauce
3 tablespoons grape jelly
1 cup red wine
1 (14-ounce) can mushrooms, drained

  • Fillet and cut 2 sage grouse into 1-inch cubes. Soak in milk for several hours or overnight. Drain and pat dry. Coat with seasoned flour (to flour add generous amounts of paprika, garlic salt, onion salt, and pepper--flour should have a red tint). Brown in hot oil. Place in Dutch oven.Add sauce ingredients.
