EAST CAROLINA VINEGAR BBQ SAUCE RECIPE

East Carolina Vinegar BBQ Sauce Recipe image

Create your own amazing East Carolina vinegar BBQ sauce and mop with this simple to follow recipe. Tangy and spicy, Low Country vinegar sauce is great for finishing fatty pork and does double duty as a baste (or mop) for adding layers of flavor to the meat as it cooks. Because it is so thin, it penetrates deep.

Number Of Ingredients 6

1 1/2 cups of distilled vinegar
1 teaspoon hot sauce
2 tablespoons sugar ((white, light brown, or dark brown))
1 tablespoon salt
2 teaspoons crushed red pepper
2 teaspoons finely ground black pepper

Steps:

  • Prep. Pour all the ingredients into a jar and shake. Let it sit for at least 12 hours to allow the flavors to meld. A week is better.
  • Use. You can use it as a mop when you cook, you can use it as a finishing sauce when you serve the meat, or both. In the Carolinas, it is usually used as both a mop and a finishing sauce.
  • To use it as both a mop and finishing sauce, warm it, pour a few ounces (~89mL) into a cup and paint it on the meat with a basting brush once every hour or so while it is cooking. If you use it as a mop, the sauce in the cup can get contaminated with uncooked meat juices on the brush. That's why you don't want to dip the brush in the whole bottle. Discard contaminated mop and serve untouched sauce at the table.

WESTERN NORTH CAROLINA VINEGAR BARBECUE SAUCE

Western North Carolina Vinegar Barbecue Sauce image

I was searching for a western NC bbq sauce for some beef for my husband and there were none on here so I am posting this one. There are disputes about how western versus eastern NC bbq sauces are made. Some say no tomato based and some say add that ketchup! I don't really know, but this is good! Transfer some of the sauce to a plastic squeeze bottle for serving, and keep the rest in a glass quart jar in the refrigerator. I don't eat meat but love to dunk my toast in this. It's also good over grilled vegetables! I borrowed this from Allrecipes, submitted by Ogreugly.

Time 50m

Yield 32 serving(s)

Number Of Ingredients 11

4 cups cider vinegar
1 cup brown sugar
1 1/3 cups ketchup
1/4 cup butter
2 tablespoons hot pepper sauce, to taste (Texas Pete is good or Tabasco)
2 tablespoons fresh lemon juice (optional)
2 tablespoons Worcestershire sauce
2 teaspoons crushed red pepper flakes
2 teaspoons mustard powder
1 teaspoon salt
1 teaspoon fresh ground black pepper

Steps:

  • Place the vinegar, sugar, ketchup, butter, hot pepper sauce, lemon juice, Worcestershire sauce, red pepper flakes, mustard powder, salt, and pepper into a saucepan.
  • Bring to a simmer over high heat, and then reduce heat to medium-low, and simmer about 30 minutes longer, stirring occasionally.
  • Remove from stove and pour into a heatproof bowl. Cover, and refrigerate the sauce for 2 days.
  • Strain the sauce through a sieve to remove the red pepper flakes.
  • Store the sauce in the refrigerator.
  • Bring to room temperature before serving.
  • To serve, slow cook your meat (in whichever method you prefer). When done pull the meat with a fork (it should be so well cooked, it just falls off). Add sauce and toss to coat completely. Enjoy!

Tips:

  • Choose the right pork shoulder: Look for a pork shoulder with good marbling, as this will help keep the meat moist during cooking.
  • Use a flavorful rub: The rub is what will give your pork shoulder its flavor, so make sure to use a blend of spices that you enjoy. Paprika, garlic powder, onion powder, and cumin are all good options.
  • Cook the pork shoulder slowly and low: Pork shoulder is a tough cut of meat, so it needs to be cooked slowly and low in order to break down the connective tissue and make it tender.
  • Mop the pork shoulder regularly: Mopping the pork shoulder with a vinegar and pepper mixture will help to keep it moist and flavorful.
  • Let the pork shoulder rest before serving: Once the pork shoulder is cooked, let it rest for at least 30 minutes before serving. This will help the juices redistribute throughout the meat, making it even more tender and flavorful.

Conclusion:

Carolina vinegar and pepper mop BBQ sauce is a delicious and flavorful sauce that is perfect for pork shoulder. It is easy to make and can be tailored to your own taste preferences. So next time you are looking for a new BBQ sauce to try, give Carolina vinegar and pepper mop BBQ sauce a try. You won't be disappointed.
