If you like those cinnamon waffles from the frozen food department of the grocery store, you'll love these! I developed this recipe because I don't care for syrup. Most waffles need the sweetness of syrup to make them special. These waffles are yummy just as they are; no syrup necessary! Whipped cream and fruit are a great addition if you want to go all out or just add butter and powder sugar to the top. These may brown quicker than standard waffles because of the sugar in them, so test the first one and adjust the time. I have also added 2 tablespoons ground flaxseed; you can't taste a difference. Enjoy!

2 cups all-purpose flour
¼ cup white sugar
½ cup brown sugar
2 ½ teaspoons ground cinnamon
4 teaspoons baking powder
¼ teaspoon salt
1 ¾ cups milk
½ cup vegetable oil
1 teaspoon vanilla extract
2 egg whites
cooking spray

Steps:

  • Whisk flour, white sugar, brown sugar, cinnamon, baking powder, and salt together in a bowl until no lumps remain.
  • Pour milk, vegetable oil, and vanilla extract into the flour mixture; stir until just combined.
  • Beat egg whites until foamy in a large glass or metal mixing bowl until soft peaks form. Lift your beater or whisk straight up: the egg whites will form soft mounds rather than a sharp peak.
  • Fold the the beaten egg whites into the batter.
  • Preheat a waffle iron and coat with cooking spray.
  • Pour batter onto waffle iron in batches and cook until crisp and golden brown, about 2 minutes; repeat until all batter is used.

1 roll refrigerated cinnamon rolls with cream cheese frosting (the small ones)
1/2 cup powdered sugar
1/4 cup milk (can use almond, soy or other non dairy milk)
1/4 cup real maple syrup
cooking spray

Steps:

  • Preheat your waffle iron; open cinnamon rolls and remove frosting.
  • In small bowl, whisk together frosting, milk, powdered sugar, & maple syrup until smooth; set aside.
  • Spray waffle iron with cooking spray; set cinnamon rolls on waffle iron and press down, cooking for approximately 4-5 minutes until cooked. You may have to press down on the iron during cooking if they start to puff up too much. You may need to spray again to prevent sticking after cooking several waffles.
  • Serve with glaze. Be prepared for much thanks! (And have an extra can on hand just in case!).

Steps:

  • Open the can of cinnamon rolls, separate the rolls and set aside the icing.
  • Heat your waffle iron and spray liberally with cooking spray.
  • Put one cinnamon roll in the center of the waffle iron, close the lid and cook for 2-3 minutes or until your waffle is cooked throughout and golden brown.
  • Spray waffle iron again and repeat with the remaining rolls.
  • Drizzle with the icing or maple syrup.
