POTATO AND CARROT MASH

Potato and Carrot Mash image

I ate this often growing up, or some variation of it. My mom would always add things to the mashed potatoes if we were running low on potatoes - mostly carrots, but sometimes even turnip. The bits of carrot stay a little firmer than the potatoes, so you get little pops of sweetness in every bite.

Tips:

  • Choose the right carrots: Look for carrots that are firm, smooth, and brightly colored. Avoid carrots that are limp, wrinkled, or have blemishes.
  • Peel and chop the carrots evenly: This will help them cook evenly. If the carrots are too thick, they will take longer to cook and may not be as tender.
  • Use a good quality broth: The broth is the base of the soup, so it's important to use a good one. You can use chicken broth, vegetable broth, or even water, but the broth will add more flavor to the soup.
  • Don't overcook the carrots: Overcooked carrots will be mushy and lose their flavor. Cook them until they are just tender, about 15-20 minutes.
  • Season the soup to taste: Add salt, pepper, and other seasonings to taste. You can also add a squeeze of lemon juice or a dollop of sour cream.
  • Serve the soup hot: Carrot soup is best served hot, with a side of mashed potatoes or crusty bread.

Conclusion:

Carrot soup is a delicious and comforting dish that is perfect for a cold winter day. It is also a great way to use up leftover carrots. With just a few simple ingredients, you can make a delicious and nutritious soup that the whole family will enjoy. So next time you have some extra carrots, give this recipe a try!
