Water, vegetable oil and eggs called for on box for cakelike brownies
2/3 cup chopped salted roasted cashews
1 bar (1.76 oz) Milky Way™ candy, cut lengthwise in half, then chopped (about 1/3 cup)

Steps:

  • Heat oven to 350°F (325°F for dark or nonstick pan). Line 9-inch square pan with foil, allowing some to hang over edges of pan. Grease bottom and sides of foil with shortening or cooking spray.
  • Make brownie batter as directed on box for cakelike brownies. Stir in 1/3 cup of the chopped cashews and the chopped candy bar. Spread in pan. Sprinkle remaining 1/3 cup cashews evenly over batter.
  • Bake 28 to 33 minutes or until toothpick inserted 2 inches from side of pan comes out almost clean. Cool completely on cooling rack, about 1 1/2 hours. Using foil to lift, remove brownies from pan, and peel foil away. Cut into 4 rows by 4 rows.

375g toasted cashews
125g butter
350ml double cream
1 tsp vanilla bean paste
400g golden caster sugar
250ml golden syrup
sea salt , for sprinkling

Steps:

  • Line a 20cm square tin with foil and rub generously with vegetable oil. Add half the cashews to the tin. In a saucepan, bring the butter, cream and vanilla to the boil, then remove from the heat.
  • In a large heavy-based saucepan, heat the sugar and syrup on a medium-low heat until it reaches 155C on a sugar thermometer. Do not stir or the sugar will crystallise. Turn off the heat and very carefully add to the cream mixture. Stir together and heat again until it reaches 125C on the thermometer. Remove from the heat and pour in the remaining nuts. Quickly pour into the tin, sprinkle over the salt and leave to cool.
  • When firm (after 3-4 hrs), cut into pieces -use a knife that has been dipped into boiling water. Wrap in baking parchment until ready to eat. Will keep for 2 weeks in an airtight tin.

3 ounces bittersweet chocolate, chopped
1 (12 ounce) bag semi-sweet chocolate chips, divided
3/4-1 cup butter
4 eggs
1 1/4-1 1/2 cups sugar
2 teaspoons vanilla
1 cup flour
1/2-1 teaspoon baking powder
1/2 teaspoon salt
20 Oreo cookies, crushed (I use the food processor to crush them)
40 Rolo chocolates, unwrapped & cut in half (chewy caramels covered in milk chocolate, packaged in gold foil - 8 1/2 oz)
3/4 cup roasted cashews, coarsely chopped

Steps:

  • Preheat oven to 350°F.
  • Grease & flour a 13x9-inch baking pan.
  • In a 1-qt, microwavable bowl, combine baking chocolate, 2/3 cup chocolate chips, and butter, and microwave on HIGH, stirring every 30 seconds, until melted and smooth (1 1/2-2 minutes).
  • Allow to cool slightly (about 5 minutes).
  • In a large bowl, beat eggs, sugar, and vanilla at medium speed of electric mixer until smooth.
  • Add melted chocolate and beat until well blended.
  • Add flour, baking powder, and salt, and beat at low speed until mixed.
  • Stir in crushed cookies and remaining chocolate chips by hand.
  • Pour batter into prepared pan and spread.
  • Bake until the edges begin to pull away from the sides of the pan and the center is set (when a toothpick inserted in the center of the pan comes out just slightly moist) (30-40 minutes); don't overbake.
  • Immediately sprinkle rolos on top of hot brownies and let stand until the caramels soften (10 minutes).
  • Pull tip of toothpick through softened candy to spread and swirl (won't completely cover tops of brownies).

1 2/3 cups all-purpose flour
1/2 teaspoon salt
2 1/2 cups roasted salted cashews
2 tablespoons plus 1 teaspoon canola oil
1 stick (8 tablespoons) unsalted butter, softened
3/4 cup packed light-brown sugar
1/2 cup granulated sugar
1 large egg
1 teaspoon pure vanilla extract
24 cubes soft caramel candy (7 ounces)
1/4 cup heavy cream

Steps:

  • Preheat oven to 350 degrees. Sift flour and salt together. Coarsely chop 1 cup cashews; set aside. Process remaining 1 1/2 cups cashews in a food processor until finely chopped. Pour in oil. Process until mixture is creamy, about 2 minutes.
  • Put cashew mixture, butter, and sugars in the bowl of an electric mixer fitted with the paddle attachment; mix on medium speed until fluffy, about 2 minutes. Mix in egg and vanilla. Reduce speed to low; gradually add flour mixture. Mix in reserved chopped cashews.
  • Shape dough into 1 1/2-inch balls; space 2 inches apart on 2 parchment-lined baking sheets. Bake 6 minutes; gently flatten with a spatula. Bake until bottoms are just golden, 6 to 7 minutes more. Let cool completely on sheets on wire racks.
  • Melt caramels with cream in a small saucepan over low heat, stirring. Let cool. Using a spoon, drizzle caramel over cookies; let set. Store airtight in single layers.

2 pounds milk chocolate candy coating, coarsely chopped, divided
1 cup salted cashew halves
28 caramels
2 tablespoons heavy whipping cream

  • Line baking sheets with waxed paper and grease paper with butter; set aside., In a microwave, melt 1 pound of candy coating; stir until smooth. Drop by scant tablespoonfuls onto prepared pans. Let stand until partially set, about 3 minutes. Top each with six or seven cashews. Let stand until completely set., In a small heavy saucepan, combine caramels and cream. 5 quarts popped popcorn
2 cups unsalted cashews
2 cups packed brown sugar
½ cup light corn syrup
1 cup unsalted butter
1 teaspoon salt
¼ teaspoon cream of tartar
1 teaspoon baking soda

Steps:

  • Preheat oven to 200 degrees F (95 degrees C).
  • Mix popcorn and cashews together in a large roasting pan.
  • Combine brown sugar, corn syrup, butter, salt, and cream of tartar in a large saucepan. Bring to a boil, stirring constantly, until a candy thermometer inserted into the middle of the syrup, not touching the bottom, reads 260 degrees F (127 degrees C), 6 to 8 minutes.
  • Remove syrup from heat; stir in baking soda. Pour over popcorn and cashews; stir to coat.
