1 tablespoon reduced sodium soy sauce
1 tablespoon rice vinegar
1 teaspoon chili sauce (with garlic)
2 teaspoons toasted sesame oil
1 tablespoon minced fresh ginger
3 cups snow peas (about 9 ounces, trimmed)
3/4 cup trimmed and quartered radish (about 1 bunch)
4 scallions (cut into 1/2-inch pieces)
3 tablespoons unsalted cashews (toasted ~ or substitute peanuts)

Steps:

  • Combine soy sauce, vinegar and chile-garlic sauce in a small bowl.

1 T. fresh minced ginger
3 c. snow peas (I substituted snap peas and blanched slightly prior to stir frying
3/4 c. quarter radishs
4 green onions sliced 1/2 inch thick
3 T. cashews, toasted (I sub. roasted peanuts)

Steps:

  • 1.Combine first 3 ingred. in a small bowl 2.Heat oil, then add ginger for about 30 seconds 3. Add snow peas, radishes and onions. . stir fry until tender crisp 2-4 min. 4. Add sauce to coat. . .remove from heat and add nuts. Aprox. 90 calories per serving
