Cauliflower Cheese Sinful!!! image

This traditional British dish has cauliflower that is steamed till soft but I brought it an other level and roasted it first. Using Recipe #106251 PLEASE PLEASE don't eat the roasted cauliflower before making the final dish. You may want to double the roasting part so you and anyone the inhales the aroma from the kitchen can munch on it, till the final product is done. Don't stop at rosemary! if you enjoy herbs as I do, do add all 4 parsley, sage, rosemary and thyme as Simon & Garfunkel sang....

Provided by Sarah Cook

Categories     Side dish

Time 45m

Number Of Ingredients 6

1 large cauliflower (leaves cut off), broken into pieces
500ml milk
4 tbsp flour
50g butter
100g strong cheddar, grated
2-3 tbsp breadcrumbs, if you have them

Steps:

  • Bring a large saucepan of water to the boil, then add 1 large cauliflower, broken into pieces, and cook for 5 mins - lift out a piece to test, it should be cooked.
  • Drain the cauliflower, then tip into an ovenproof dish. Heat oven to 220C/200C/gas 7.
  • Put the saucepan back on the heat and add 500ml milk, 4 tbsp flour and 50g butter.
  • Keep whisking fast as the butter melts and the mixture comes to the boil - the flour will disappear and the sauce will begin to thicken. Whisk for 2 mins while the sauce bubbles and becomes nice and thick.
  • Turn off the heat, stir in most of the 100g grated cheddar cheese and pour over the cauliflower. Scatter over the remaining cheese, and 2-3 tbsp breadcrumbs if using.
  • Put in the oven and bake for 20 mins until bubbling.

Tips:

  • Choose a good cauliflower. Look for a head that is compact and heavy, with no brown spots or blemishes.
  • Trim the cauliflower correctly. Cut off the leaves and the tough outer layer of the cauliflower. Cut the cauliflower into florets about 1-2 inches in size.
  • Steam the cauliflower until tender. Steaming is the best way to cook cauliflower for this dish, as it helps to retain its nutrients and flavor. Steam the cauliflower for about 10-12 minutes, or until it is tender but still slightly firm.
  • Make a roux. A roux is a mixture of butter and flour that is used to thicken sauces. To make a roux, melt the butter in a saucepan over medium heat. Add the flour and whisk until the mixture is smooth and bubbly. Cook the roux for about 2-3 minutes, or until it is a light golden brown color.
  • Make the cheese sauce. To make the cheese sauce, whisk the milk into the roux. Bring the mixture to a simmer and cook for about 5 minutes, or until the sauce has thickened. Add the cheese and stir until it is melted and smooth. Season the sauce with salt, pepper, and nutmeg to taste.
  • Combine the cauliflower and cheese sauce. Add the cauliflower to the cheese sauce and stir to combine. Pour the mixture into a baking dish and bake at 350 degrees Fahrenheit for about 20 minutes, or until the cauliflower is heated through and theチーズソース is bubbly.
  • Garnish with parsley. Before serving, garnish the cauliflower cheese with chopped parsley.

Conclusion:

Cauliflower cheese is a classic British dish that is both delicious and comforting. It is made with a simple combination of cauliflower, cheese sauce, and bread crumbs. The cauliflower is steamed until tender and then coated in a rich and creamy cheese sauce. The bread crumbs add a crispy topping that contrasts perfectly with the soft and creamy cauliflower and cheese. This dish is perfect for a weeknight meal or a special occasion. It can be served as a main course or a side dish.
