6 medium bell peppers
1 (10 ounce) package frozen riced cauliflower
1 teaspoon olive oil
1 pound 93% lean ground beef
1 (8 ounce) package cremini mushrooms, diced
2 medium carrots, diced
2 stalks celery, diced
½ medium yellow onion, diced
1 tablespoon Italian seasoning
1 teaspoon red pepper flakes
1 teaspoon dried oregano
½ teaspoon salt
½ teaspoon ground black pepper
3 cloves garlic, minced
1 (14.5 ounce) can diced tomatoes, drained
1 (6 ounce) can tomato paste
5 leaves fresh basil, chopped

Steps:

  • Slice tops off peppers and place peppers on a microwave-safe plate. Remove stems from pepper tops and discard. Dice flesh from pepper tops and set aside 1/2 of the diced peppers; save remaining diced peppers for another use.
  • Microwave peppers on high for 3 minutes until partially cooked.
  • Place frozen riced cauliflower in a microwave-safe bowl and microwave on high for 4 minutes, stirring halfway through.
  • Heat olive oil in a large nonstick skillet over medium-high heat until hot, about 1 minute. Add beef, mushrooms, carrots, celery, onion, and reserved diced peppers and cook until onions begin to turn translucent and beef is nearly cooked, about 5 minutes. Stir in Italian seasoning, red pepper flakes, oregano, salt, and pepper; cook for 1 minute. Add cooked riced cauliflower and garlic; stir and cook until beef is browned and crumbly, breaking up any chunks with a spoon, 2 to 3 more minutes.
  • Preheat the oven to 350 degrees F (175 degrees C).
  • Add drained tomatoes, tomato paste, and fresh basil to the skillet and cook until nearly all liquid is absorbed, about 5 more minutes. Turn off heat and allow beef mixture to cool slightly, about 5 minutes.
  • Stuff beef mixture evenly into peppers. Stand peppers upright in a baking dish.
  • Bake in the preheated oven until peppers are tender and filling is hot, about 30 minutes.

Time 1h20m

Yield 4

Number Of Ingredients 13

6 slices gluten-free bacon, chopped
1 tablespoon Dijon mustard
1 tablespoon low-sodium tamari soy sauce
1/2 teaspoon salt
1/4 teaspoon ground red pepper (cayenne)
1 teaspoon minced garlic
1 egg, beaten
6 cups cauliflower florets
1 cup coarsely chopped onion
1 cup chopped celery
3 cups shredded kale
4 red or yellow bell peppers, halved lengthwise, seeds and stems removed
2 teaspoons chopped fresh thyme leaves

Steps:

  • Heat oven to 400°F. Line cookie sheet with foil.
  • In 10-inch skillet, cook bacon over medium heat until crispy. Remove bacon from skillet, reserving bacon drippings in skillet. In small bowl, crumble 2 slices of bacon; set aside. • Meanwhile, in food processor fitted with metal blade, place cauliflower. Cover; pulse until very finely chopped (about the size of couscous).

Tips:

  • Choose small bell peppers. Medium or large bell peppers can be more difficult to stuff and may not cook evenly.
  • Cut the tops off the bell peppers carefully. You want to create a clean, even cut so that the tops can be easily replaced after stuffing.
  • Remove the seeds and ribs from the bell peppers. This will help to create more space for the stuffing and make the peppers easier to eat.
  • Cook the cauliflower rice before stuffing the peppers. This will help to reduce the cooking time and prevent the peppers from becoming soggy.
  • Use a variety of vegetables in the stuffing. This will add flavor, texture, and nutrients to the dish.
  • Season the stuffing well. Be sure to use a combination of herbs, spices, and salt and pepper to taste.
  • Pack the stuffing tightly into the bell peppers. This will help to prevent the peppers from falling apart during cooking.
  • Bake the stuffed peppers at a high temperature. This will help to caramelize the vegetables and create a slightly crispy texture.
  • Serve the stuffed peppers immediately. They are best when they are hot and fresh out of the oven.

Conclusion:

Cauliflower stuffed peppers are a delicious and healthy meal that can be enjoyed by people of all ages. They are a great way to get your daily dose of vegetables, and they are also a good source of protein and fiber. If you are looking for a new and exciting way to prepare bell peppers, give this recipe a try. You won't be disappointed!
