BROWNED BUTTER ROASTED CAULIFLOWER
When I was growing up, my mother (who insists on loving some of the least popular vegetables) always raved about how deliciously sweet and tender cauliflower can be. Here, the briny capers, lemon juice and sweet raisins allow the caramelized, nutty cauliflower to shine. -Gina Myers, Spokane, Washington

LINGUINE WITH CAULIFLOWER AND BROWN BUTTER
"Choose a firm cauliflower with crisp green leaves which can be refrigerated, tightly wrapped, for three to five days." This is another side dish that sounded very appealing! It was on Martha Stewart's web site and we have tweaked it ever so slightly; we added some nuts for more crunch and red pepper flakes for some heat. It was very, very good!

ROASTED CAULIFLOWER WITH CAPER BROWN BUTTER
Turn boring cauliflower into a delicious side when you top it with a caper and garlic brown butter. I like to cut my cauliflower into slices instead of florets, so there is more flat surface area for roasting and the topping doesn't slide off.

Steps:
- Preheat the oven to 400 degrees F (200 degrees C). Line a baking sheet with parchment paper.

- Meanwhile, cut butter into 4 pieces. Melt in a small saucepan over medium heat, stirring constantly until butter begins to brown, 4 to 5 minutes. Butter will foam up, then subside. The butter should have a nutty aroma. Stir in garlic and continue stirring for 15 to 20 seconds. Add in capers and lemon pepper. Remove from heat.
- Spoon brown butter over the roasted cauliflower and serve.

Steps:
- Heat the oven to 180C/160C fan/gas 4. Cut off enough of the cauliflower stalk so it sits flat, then cut a deep cross in the base of the stalk. Sit the cauliflower on a piece of foil, then rub over 1 tbsp oil. Sprinkle over 2 tbsp water, season well, then cover tightly with the foil, sealing the water and cauliflower inside the package. Put in a baking dish and cook for 1 hr 30 mins.
- Meanwhile, cook the onions with a pinch of salt and 2 tbsp oil in a pan until soft and translucent. Stir in the garlic, mace, thyme leaves and flour and stir for 2 mins, then add the almond milk. Bring to a simmer, stirring, then season. When slightly thickened, remove from the heat and stir in the soya cream and mustard.
- Rub the breadcrumbs with the remaining oil. Stir in the almonds.
- Uncover the cauliflower and return to the dish. Pour the sauce all over the cauliflower and into the dish. Scatter the crumbs on top, and tear over the two whole thyme sprigs. Turn the oven up to 200C/180C fan/gas 6. Bake for 15-20 mins more, until the sauce is bubbling and thickened slightly, and the crumbs and cauliflower are golden. Cut into wedges and serve with a green salad and some garlic bread.

Tips for Making Cauliflower with Almonds and Brown Butter
* Choose fresh cauliflower heads that are compact and heavy for their size. * Trim the cauliflower leaves and cut the head into florets. * To make the brown butter, use unsalted butter and cook it over medium heat until it turns a golden brown color and smells nutty. * Do not overcrowd the pan when cooking the cauliflower florets. Otherwise, they will steam instead of brown. * Season the cauliflower with salt, pepper, and any other desired spices before cooking. * Roast the cauliflower florets at a high temperature (425°F/220°C) for about 20 minutes or until they are tender and browned. * For a crispier cauliflower, increase the roasting time or broil the florets for a few minutes at the end of cooking. * Sprinkle the roasted cauliflower with chopped almonds and brown butter before serving. * Serve the cauliflower as a side dish or as a main course with a protein of your choice, such as grilled chicken or fish. ###Conclusion
Cauliflower with Almonds and Brown Butter is an easy and delicious dish that can be served as a side dish or a main course. The cauliflower is roasted until tender and browned, and then tossed with almonds and brown butter. The result is a flavorful and satisfying dish that is sure to please everyone at the table.
