⅛ cup diced red bell pepper
3 tablespoons unsalted butter
1 cup shredded Gruyère cheese, divided
1 tablespoon salted butter
1 tablespoon all-purpose flour
½ cup half-and-half
1 pinch truffle salt
3 tablespoons panko bread crumbs

2 small heads cauliflower, stems trimmed (about 1 ½ pounds)
1/4 cup extra-virgin olive oil, plus more for drizzling and greasing the grates

1 fresh chile, such as serrano or Fresno, seeded if desired, finely chopped

1/2 lemon, juice of, squeezed
2 tablespoons olive oil
10 g butter
1 garlic clove, chopped
100 g gorgonzola
100 g mascarpone
500 ml milk
30 g butter
30 g flour

  • Preheat the oven at 170°C.
