Time 12h40m

Yield 42

Number Of Ingredients 6

4 clementines, zested and peeled, or more to taste
1 (16 ounce) can pitted sour cherries, drained
1 (8 ounce) can pineapple chunks, drained
2 tablespoons lemon juice
1 (1.75 ounce) package fruit pectin (such as Sure-Jell®)
5 cups white sugar

Steps:

  • Inspect 3 pint-sized jars for cracks and rings for rust, discarding any defective ones. Immerse jars in simmering water until marmalade is ready. Wash new, unused lids and rings in warm soapy water.
  • Place clementines and zest in a food processor; blend until well mashed. Transfer to a medium saucepan. Repeat with the cherries and pineapple.
  • Add lemon juice and pectin to the fruit in the saucepan. Mix and bring to a boil over medium heat. Stir in sugar. Return to a boil and cook for 2 minutes. Remove from heat.
  • Pack marmalade mixture into the hot, sterilized jars, filling to within 1/4 inch of the top. Run a clean knife or thin spatula around the insides of the jars to remove any air bubbles. Wipe rims with a moist paper towel to remove any residue. Top with lids and screw rings on tightly.
  • Place a rack in the bottom of a large stockpot and fill halfway with water. Bring to a boil and lower jars 2 inches apart into the boiling water using a holder. Pour in more boiling water to cover jars by at least 1 inch. Bring to a rolling boil, cover, and process for 10 minutes.
  • Remove the jars from the stockpot and let rest, several inches apart, for 12 to 24 hours. Press the center of each lid with a finger to ensure the lid does not move up or down. Remove the rings for storage and store in a cool, dark area.

ABSOLUTELY FAIL-PROOF EASY MARMALADE

Absolutely Fail-Proof Easy Marmalade image

This recipe was printed in the Jerusalem Post last week, and it's from Lynette Levius of Netanya, Israel. I haven't tried it yet, but plan to make a batch this weekend. February 2010: Since posting this recipe I've made it several times each winter (winter is citrus seaon here). It's a wonderful recipe, totally fail-proof as the title says. It's great on toast and makes a wonderful gift. I especially love a 50/50 orange/clementine mix, a rich citrus flavor with an intense orange color.

Yield Makes 1 cup

Number Of Ingredients 7

1/4 cup extra-virgin olive oil
1 3/4 cups chopped onion
1/2 cup water
3 tablespoons sugar
3 tablespoons dried cranberries
1 teaspoon yellow mustard seeds
1/2 cup white wine vinegar

Steps:

  • Heat oil in heavy medium saucepan over medium heat. Add onion and sautéuntil beginning to soften (do not brown), stirring frequently, about 8 minutes. Add 1/2 cup water, sugar, cranberries, and mustard seeds. Cook until almost all liquid is absorbed, stirring often, about 8 minutes. Add vinegar and simmer until marmalade is thick, stirring often, 7 to 8 minutes. Season to taste with salt and pepper. Cool. DO AHEAD: Can be made 1 week ahead. Cover and chill.

Tips:

  • Select the right champagne: Use a high-quality champagne that you enjoy drinking. A brut champagne is a good choice, as it has a dry, crisp flavor that will balance out the sweetness of the marmalade.
  • Use fresh oranges: Fresh oranges will give your marmalade the best flavor. Look for oranges that are heavy for their size and have a deep orange color.
  • Prepare your oranges properly: Be sure to wash the oranges thoroughly before you zest and juice them. You can also remove the pith from the oranges, which is the white part between the peel and the flesh. This will help to reduce the bitterness of the marmalade.
  • Cook the marmalade slowly: Cooking the marmalade slowly will help to develop its flavor and thicken it. Be patient and don't rush the process.
  • Test the marmalade for doneness: To test the marmalade for doneness, place a small amount on a cold plate. If the marmalade wrinkles when you push your finger through it, it is done.

Conclusion:

Champagne marmalade is a delicious and unique spread that is perfect for enjoying on toast, scones, or muffins. It is also a great gift for friends and family. With a little planning and effort, you can easily make your own champagne marmalade at home. So next time you have a bottle of champagne, don't just drink it - use it to make a delicious and memorable marmalade!
