ROASTED BEETS WITH FETA
This colorful and elegant side dish is so easy to make. I love making this with beets and shallots straight from our local farmers' market. Green onions or chives may be substituted for the shallot if you prefer.

ROASTED BEETS WITH CARAMELIZED ONIONS AND FETA
This is an amazing recipe for fresh beets, if you don't have any fresh beets you can substitute two 15-ounce cans drained small whole beets, halved or if they are large then quarter them, but I have to say that fresh beets are better! --- for the fresh beets you can boil them or I prefer to roast them in the oven in foil in a 400°F oven for about 30 minutes or until just fork-tender --- this is just as delicious cold as it is served hot! --- prep time does not include roasting the beets and cooking the onions.

CHARCOAL ROASTED BEETS AND RED ONIONS
This recipe comes for a not so local Farmers' Market here in our state. Last year's opening day attracted a record crowd of more then 30,000 people. Wish I could go to it every Saturday. I've not tried this but don't want to misplace the recipe.

Steps:
- Prepare a moderately hot charcoal fire in a grill unit that has a cover.
- Place beets and red onions in a 10 inch cast iron skillet and drizzle with olive oil.
- Place skillet on grill rack over fire, cover the grill unit and roast the vegetables 1 to 1 1/2 hours, depending on the size of the vegetables.

- Alternately, you can roast the beets in a skillet in a preheated 400 degree oven.
- Remove vegetables from skillet with tongs.
- Add broth, vinegar and 1 teaspoon thyme to the skillet, place over high heat and boil liquid, scraping bottom of skillet for about 4 minutes or until it's dark, glossy brown and syrupy.

Tips:
- Selecting Fresh Vegetables: Choose firm, deep-colored beets and red onions. Ensure they are free of bruises or blemishes.
- Properly Preparing Vegetables: Before roasting, trim the beets and slice them into 1-inch wedges. Peel and cut the red onions into quarters. This will promote even cooking and caramelization.
- Choose the Right Charcoal: Opt for natural hardwood or charcoal made from fruit trees for a smoky and flavorful taste. Avoid lighter fluids, as they can impart an unpleasant taste to the vegetables.
- Seasoning Techniques: Elevate the taste of the vegetables with a simple blend of herbs, spices, olive oil, and salt. Thyme, rosemary, garlic powder, and cumin are great options that complement the earthy flavors.
- Control the Heat: Start by roasting the vegetables over high heat to caramelize them, then reduce the heat to medium-low and continue cooking until tender. This ensures a perfect balance of smoky, tender, and slightly crispy textures.
- Don't Overcook: Keep an eye on the vegetables during roasting to prevent overcooking. Overcooked beets and onions can lose their vibrant color and flavor.
- Enhance Flavor with Marinade: Consider marinating the vegetables in a mixture of olive oil, balsamic vinegar, and honey for an added depth of flavor. This step is optional but highly recommended.
Conclusion:
This journey of roasting beets and red onions over charcoal offers a delightful blend of flavors and textures. By following the tips mentioned above, you can achieve perfectly roasted vegetables that are caramelized, tender, and bursting with natural goodness. Experiment with different herb and spice combinations to create a dish tailored to your taste preferences. Enjoy these roasted delights as a side dish, salad topping, or even as a main course. With their vibrant colors and exceptional taste, they are sure to be a hit at any gathering.
