1 cup cake flour (I have substituted all-purpose and it works)
1 1/2 teaspoons baking powder
3 eggs, separated,at room temperature
1/4 cup cold water
2 teaspoons vanilla
1 cup sugar
1/4 teaspoon cream of tartar

Steps:

  • Preheat oven to 350, and line 2 nine inch pans with wax paper.
  • Sift flour with baking powder; in a separate bowl, combine the water and the vanilla.
  • Beat egg yolks until thick, then slowly add the sugar bit by bit, until the mixture gets thick and cream colored.
  • Add the flour alternately with the water, beginning and ending with the flour.
  • With clean mixer, beat the egg whites with the cream of tartar untilsoft peaks form.
  • Fold egg whites into batter lightly, about 1/4 at a time.
  • Spoon into the pans and bake about 25 minutes, or until gold and springy.
  • I have added 3/4 cup nuts, 1/4 cup cocoa (sifted with the flour), 1 tbsp instant coffee, etc--it's a nice recipe to experiment with.
  • You can also make these into cupcakes--fill cupcake papers 3/4 full, bake about 12 minutes, makes about 24.

Steps:

  • Preheat oven to 325.
  • Grease only the bottom of a 9-inch round cake pan and cover with a circle of parchment paper. Do not grease the sides of the pan.
  • In a large bowl, beat egg yolks until light, gradually adding in the sugar. Add in vanilla and lemon and set aside.
  • In a medium bowl, beat the egg whites until frothy, about 1 minute at high speed, then beat in the salt and cream of tartar. Continue beating until the eggs reach soft peaks. Fold egg whites, working in 3 or 4 batches, into the yolk mixture.

1/2 stick unsalted butter, melted and cooled, plus more for pans
1 1/2 cups cake flour, plus more for pans
9 large eggs, room temperature, separated
1 1/2 cups granulated sugar, divided
1 teaspoon pure vanilla extract
Pinch of coarse salt
Confectioners' sugar, for dusting

Steps:

  • Preheat oven to 350 degrees. Butter two 9-inch round cake pans or two 12-by-17-inch rimmed baking sheets. Line bottoms with parchment; butter parchment and flour pans, tapping out excess flour. Whisk together egg yolks and 1 cup granulated sugar in a bowl set over a saucepan of simmering water until sugar has dissolved and mixture is warm, 3 to 4 minutes. Let cool completely, about 1 hour, before unrolling and spreading with filling.
