4 strips bacon, cut into 1/4-inch slices
1/4 medium onion, finely diced
Two 27-ounce cans pinto beans
2 serrano peppers, scored
1 medium tomato, finely diced
2 cloves garlic, minced
Salt and pepper
Salt and pepper
1/4 bunch fresh cilantro (don't use the stems and don't chop, just snip or pinch off the leaves)

Steps:

  • In a large saucepan, fry the bacon over medium heat for 3 to 4 minutes. Then add the onions and cook until the bacon is cooked but not crisp and the onions are translucent, another couple of minutes. Do not drain the bacon grease because it gives the beans a good taste. Add the beans, peppers, tomatoes, garlic and 1 1/2 cups water, and cook for 10 to 15 minutes. Add some salt and pepper and the cilantro and remove from the heat.

2 (14 1/2 ounce) cans cut green beans (organic tastes best)
1/2 medium vidalia onion (diced)
1 slice thick cut bacon (butcher style-extra thick-diced)
8 ounces chicken broth (organic)
1/2 teaspoon fresh ground black pepper (coarsely ground)
1/4 teaspoon sea salt

Steps:

  • Dice bacon. Fry to just crisp (not extra crispy).
  • Drain approximately half the liquid out of each can of green beans. Add green beans and their liquid along with the diced onions to sauce pan. Pour bacon and all drippings into sauce pan. Add chicken broth, salt and pepper. Bring to a boil then turn to medium, cover and cook for 45 minutes - 1 hour.

1 tablespoon finely chopped onion
1 garlic clove, minced
1 teaspoon butter

2/3 cup brown sugar

1/2 pound bacon

  • Cut bacon into bite size pieces. Cook bacon, drain on paper towels, set aside. Note: Don't let it get too crispy. 1 dash paprika (or cayenne pepper)
1 -2 cup of shredded cheddar cheese

1 pint heavy cream

  • Butter baking dish (I used a 9 x 13 baking dish).
  • Boil water with dash of salt.
  • Cook green beans until tender - about 10-15 minutes.

  • Dot with butter half of required butter.
