CHEATERS RUSSIAN KHRUSTY

Cheaters Russian Khrusty image

Years ago when I was a scout leader our troop was working on an International badge, which each troop member brought a recipe and a dish for everyone to taste. This is one of my favorite of those recipes. Its a pastry-like cookie that is deep fried and sprinkled with confectioners sugar.

Time 1h30m

8 ounces egg roll wraps
1 cup confectioners' sugar
vegetable oil (for frying)

Steps:

  • Cut 1 sheet at a time of egg roll wrappers from corner to corner to form a triangle.
  • Fold two corners on long side of triangle to form a smaller triangle (does not have to be precise).

KHRUSTYKY

Khrustyky image

This crispy, dainty pastry dusted with confectioners' sugar has an eggy flavor similar to cream puffs. I honor my Ukrainian heritage by serving khrustyky on Christmas Eve as part of the traditional feast of 12 dishes. Each dish symbolizes one of the apostles. -Carol Funk, Richard, Saskatchewan

Tips:

  • Use a large bowl for mixing the dough to ensure there is enough space for the ingredients to come together easily.
  • Do not overmix the dough; otherwise, the khrusty will become tough. Mix just until the ingredients are well combined.
  • If the dough is too dry, add a little more milk or water, one tablespoon at a time, until it reaches the desired consistency.
  • Before frying the khrusty, make sure the oil is hot enough. If the oil is not hot enough, the khrusty will absorb too much oil and become greasy.
  • Fry the khrusty in batches to avoid overcrowding the pan. Overcrowding the pan will cause the khrusty to stick together and become soggy.
  • When frying the khrusty, use a slotted spoon to gently flip them over to ensure they cook evenly on both sides.
  • Drain the khrusty on paper towels to remove excess oil before serving.
  • Serve the khrusty hot with your favorite toppings, such as powdered sugar, cinnamon sugar, or honey.
