CHEDDAR CHEESE AND CHUTNEY TOASTED DOORSTEP SANDWICH!
A real old fashioned British style "Doorstep" sandwich, jazzed up a wee bit by adding chutney with mayonnaise and then toasting it........just delicious! The only criteria for these toasted "sarnies" is that you use THICK slices of good quality white Farmhouse style bread; such as home-made or Artisanal crusty bread! And, a good quality Cheddar cheese - preferably mature with good mayonnaise and tangy chutney! Although I have given the method for grilling (broiling) these sarnies, they'll be fine if they're made in an electric sandwich or grilling machine, such as a George Foreman. There is no need to add the chutney separately then, just add it to the cheese and mayonnaise mixture. This is a recipe for one greedy person - please increase the quantities for more greedy people if necessary!!

Steps:
- In a medium saucepan, combine the vinegar, 1 tablespoon salt, the peppercorns, red pepper flakes, carrots, garlic, shallot, and water. Bring to a boil over high heat and cook, stirring to dissolve the salt, for 1 minute. Remove from the heat and let cool to room temperature, about 20 minutes. (If not using immediately, transfer the carrots and their brine to an airtight container and refrigerate for up to 2 weeks.)
- Meanwhile, heat the vegetable oil in a large cast-iron skillet over high heat.
- Season the steak with salt and pepper. Transfer to the skillet and cook, flipping halfway, until golden brown on the outside and medium-rare inside, 6-8 minutes total. Transfer to a cutting board and let rest for 10 minutes, then thinly slice against the grain.
- Return the skillet to medium heat and add the butter. Once melted, add 2 slices of sourdough bread. Top each slice with ½ cup shredded cheddar, and cook, undisturbed, until the bread is golden brown and toasted on the bottom and the cheese begins to melt, about 3 minutes. Divide the sliced steak between each slice of bread in the skillet, then top each with ½ cup of the remaining cheese and another slice of bread. Flip the sandwiches, cover the pan with a lid, and cook until the cheese has fully melted and the other side of the bread is golden brown and toasted, 2-3 minutes more.
- Transfer the sandwiches to a cutting board and wrap each in foil. Serve with the pickled carrots alongside.
- Enjoy!

Tips:
- Choose the right bread: A sturdy bread like sourdough or ciabatta will hold up well to the fillings and won't get soggy.
- Use high-quality cheddar cheese: The better the cheese, the better the sandwich. Look for a cheese that's sharp and flavorful.
- Make your own chutney: Homemade chutney is easy to make and adds a delicious depth of flavor to the sandwich.
- Don't be afraid to experiment with different flavors: There are endless possibilities when it comes to chutney flavors. Try a sweet and tangy mango chutney, a spicy tomato chutney, or a smoky roasted red pepper chutney.
- Grill the sandwich: Grilling the sandwich gives it a nice crispy exterior and helps to melt the cheese and chutney together.
Conclusion:
The cheddar cheese and chutney toasted doorstep sandwich is a classic for a reason. It's simple to make, yet packed with flavor. The sharp cheddar cheese and tangy chutney are a perfect combination, and the grilled bread adds a nice crispy touch. Whether you're looking for a quick and easy lunch or a hearty snack, this sandwich is sure to hit the spot.
