1 cup uncooked old-fashioned grits
1/2 teaspoon salt
1/2 cup 2% milk
1/4 cup butter, melted
2 large eggs, lightly beaten
1 cup shredded cheddar cheese
1 tablespoon Worcestershire sauce
1/8 teaspoon cayenne pepper
1/8 teaspoon paprika

Steps:

  • Preheat oven to 350°. In a large saucepan, bring water to a boil. Slowly stir in grits and salt. Reduce heat; cover and simmer until thickened, 5-7 minutes. Cool slightly. 2 ¼ cups water
1 teaspoon salt
1 cup quick-cooking grits
1 (8 ounce) package processed cheese (such as Velveeta®), cubed
½ pound sharp Cheddar cheese, cubed
¼ cup butter
⅛ teaspoon garlic powder
2 eggs, beaten

8 slices bacon, cut into 1/2-inch pieces
1 onion, very thinly sliced
4 cups low-sodium chicken broth
2 cups coarse stone-ground grits
2 cups heavy cream
2 cups grated Monterey Jack cheese
Kosher salt and freshly ground black pepper

Steps:

  • In a heavy pot, cook the bacon over medium heat to render the fat, about 2 minutes.
