CHICKEN, BROCCOLI, AND CHEDDAR CASSEROLE
Super comfort food, but kinda healthy because it has broccoli in it, right? My grandmother passed this chicken and Cheddar recipe down and it is a family favorite. After the first time I made it, I went on a casserole kick and made it twice a week for 3 months straight! I typically serve this over rice, but it is just as great by itself. Last time I didn't make rice, but served it with bread.

CHEDDAR RICE
Absolutely a kid pleaser, uses up that leftover rice and just maybe a good alternative to mac n cheese. Adding herbs is, also, an option...oohhhh, maybe a little sweet pepper, or how about...

Steps:
- Combine rice, sour cream, salt, pepper, and 1/2 the cheese. Spoon into a buttered, shallow 1-quart baking dish. Top with remaining cheese. Bake at 350 degrees for about 20 minutes.
Tips:
- Cook the rice perfectly: Use a ratio of 1 cup of rice to 2 cups of water or broth. Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for 18-20 minutes, or until the rice is tender and all the liquid has been absorbed.
- Use flavorful cheese: A sharp cheddar cheese will give the casserole a bold flavor, while a mild cheddar will produce a more subtle taste. You can also use a combination of cheeses, such as cheddar and Parmesan or cheddar and mozzarella.
- Add vegetables for a boost of nutrition: Diced carrots, celery, onions, and bell peppers are all great additions to cheddar rice casserole. They add flavor, texture, and nutrients to the dish.
- Don't overcook the casserole: The casserole is done when the cheese is melted and bubbly and the rice is tender. Overcooking can make the rice mushy and the cheese tough.
- Serve immediately: Cheddar rice casserole is best served hot out of the oven. You can garnish it with chopped parsley or green onions for extra flavor.
Conclusion:
Cheddar rice casserole is a versatile and easy-to-make dish that can be enjoyed for breakfast, lunch, or dinner. It's a great way to use up leftover rice and cheese, and it's also a budget-friendly meal. With its creamy, cheesy flavor and comforting texture, cheddar rice casserole is sure to be a hit with the whole family.
