1 pound breakfast sausage
1/3 stick (about 2 1/2 tablespoons) salted butter
18 large eggs
1/2 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
3 cups grated cheese

Steps:

  • Wrap the flour tortillas in paper towels and microwave them for 1 minute to make them pliable. Set them aside.
  • Crumble the sausage finely into a large skillet over a medium heat and cook until brown, 5 to 6 minutes.
  • Add the butter to a large nonstick skillet over a medium heat. Beat the eggs in a large bowl with the salt and pepper. When the butter has melted, turn the heat to low and pour in the eggs, then the sausage. Slowly cook the mixture, using a wooden spatula to push it around the skillet, until the eggs are totally cooked through, 8 to 10 minutes.
  • Place approximately 1/2 cup of the egg and sausage mixture into a warm tortilla, along with a pinch of cheese. Roll up (do not tuck in the ends). Wrap in a foil square and keep warm until ready to serve. Repeat with the remaining ingredients.

1 ounce sour cream
10 pounds ground beef

6 ounces chili powder
6 ounces granulated garlic
6 ounces diced onion
4 ounces ground cumin
2 ounces beef bouillon
1 ounce red pepper flakes
2 ounces seasoned salt
1 ounce ground black pepper

  • Lay tortilla out and place cheese, onion, jalapeno and bacon in center of tortilla evenly, leaving room at each end to tuck in and roll into a burrito. Cut hot dog in half lengthwise, not cutting all the way through, then butterfly the hot dog open and add to burrito. Top with the french fries, Red Chili and sour cream and roll it up burrito style!
  • Brown meat in a very large pot, then add the chili beans, tomatoes, tomato sauce, chili powder, granulated garlic, onion, cumin, bouillon, red pepper flakes, salt and pepper. Stir together and let simmer for 30 minutes.

1 package (8-1/2 ounces) ready-to-serve Santa Fe whole grain rice medley
1/2 pound lean ground beef (90% lean)
3/4 cup frozen corn, thawed
3/4 cup black beans, rinsed and drained
1 jar (12 ounces) salsa
4 ounces process cheese (Velveeta), thinly sliced
6 flour tortillas (10 inches), warmed
Optional: Torn leaf lettuce, chopped onion, chopped sweet red pepper, sour cream and shredded Mexican cheese blend

  • Heat rice according to package directions. Meanwhile, crumble beef into a 4-qt. microwave-safe dish. Add corn and beans; mix well. 1 lb flank steak
1 teaspoon taco seasoning
2 teaspoons salt, divided
2 teaspoons lime juice, divided
2 avocados
¼ cup mexican sour cream
8 oz flaming hot cheetos, 1 bag
½ cup cheddar cheese, canned
1 canola oil, to fry

Steps:

  • Cut flank steak into fajita size pieces and place in bowl. Add the taco seasoning, 1 teaspoon lime juice and salt. Let marinate for 30 minutes.
  • Scoop avocado with a spoon and place in a bowl. Add 1 teaspoon lime juice, salt and mash with a fork until soft enough to whisk.
  • In a frying pan, add 1 tablespoon of canola oil and let heat for 30 seconds. Add marinated meat and let cook for 20 minutes, stirring until meat is browned.
  • In a small saucepan heat condensed cheddar cheese for 3 minutes, stir throughout.
  • On a griddle warm up flour tortilla until soft. Add cooked meat, add half of guacamole, 2 tablespoons of sour cream, 1 bag of hot cheetos, and warm cheddar cheese.
  • Wrap burrito up, fold ends in then each corner of the top side until you can roll the top side up.
  • Slice in half.
  • Enjoy!
