The recipe is dedicated to all those single parents and career people that don't have a lot of time at the end of the day to prepare dinner and that don't mind using prepared ingredients for a quick meal. I made this up because my daughter was sick with a cold and a sore throat and wanted something soft and easy to eat. Granted the French fried onions did not fit in with that idea, but they did add a nice taste and crunch to this casserole and she managed them just fine despite her sore throat. Since I was caring for both her and my baby grandson, I didn't have a lot of time to spend on making dinner. The entire casserole (except for the spices) cost me about $20 and after feeding 3 adults, there is plenty left over for another meal or lunches at work the next day. If you don't like leftovers, halve the recipe. I much prefer using ingredients that do not come from a jar or a can, but sometimes, you just have to do what you have to do to put a meal on the table on a budget, and this was my attempt. It is pretty tasty if I may say so for myself.

1 lb lean ground beef
1 medium onion, diced small
2 (16 ounce) packages large shell pasta (cooked according the the package instructions)
2 (15 ounce) jars alfredo sauce
1 (16 ounce) package Velveeta cheese, cubed
1 (6 ounce) can French-fried onions
2 cups frozen corn or 2 cups chopped broccoli
2 teaspoons garlic powder
1/2 teaspoon ground pepper
1 teaspoon salt

Steps:

  • Preheat oven to 400 degrees.
  • Brown the ground beef with the onions and spices; drain and rinse off the fat (you don't need the fat for flavor because you are going to add cheese flavors).
  • In the meantime, cook the pasta according to the package instructions.
  • In a large casserole dish, mix together the ground beef and onion mixture, the vegetables, cooked pasta, jarred Alfredo sauce, and cheese cubes.
  • Bake for 10 minutes; stir.
  • Top casserole with the French fried onions.
  • Bake for another 5 to 10 minutes or until hot and onions are browning.

1 (8 ounce) can crescent rolls
8 ounces alfredo sauce
1 lb ground beef
1 large onion (chopped)
1 cup Velveeta cheese (cubed)
2 cups egg noodles

Steps:

  • Preheat the oven to 350.
  • Brown the ground beef with the chopped onions. (season the beef mixture to your taste.).
  • Cook the egg noodles thoroughly.
  • Cube the velveeta cheese.
  • When the ground beef is browned and the noodles are cooked, strain both of them and empty them into a casserole dish. Mix in the cheesy alfredo sauce and cubed velveeta.
  • Open the can of crescent rolls and create a top crust on top of the beef noodle mixture.
  • Put in the oven uncovered and cook for 30 mins or until cheese is melted.
  • Serve warm.

1 package (2 sheets) puff pastry
1 medium onion
1 lb ground beef
1 1/2 tsp ground sage
2 Tbsp Worcestershire sauce
1 tsp black pepper
1 tsp thyme
1 tsp oregano
1 1/2 tsp ground basil
1 bag (14 oz.) frozen peas
1 bag (14 oz.) frozen corn
1 can Alfredo sauce
2 cups Kraft Shredded Mozzarella Cheese
2 Tbsp salt

Steps:

  • Preheat oven to 350°F degrees. Follow puff pastry direction to thaw and while it is thawing start the following:
  • Finely mince onion (I used a chopper to do it) and put in medium frying pan. Add ground beef, sage, Worcestershire sauce, pepper, thyme, oregano, and basil. Cook on medium high stirring occasionally until browned.
  • Cook peas and corn in a separate pot of boiling water for approx. 8-10 minutes. When meat and peas and corn are done, put into a mixing bowl and mix all ingredients.
  • Warm Alfredo sauce on med-low heat. DO NOT BRING TO BOIL! Add warm Alfredo sauce to meat mix in bowl. Add mozzarella cheese and salt and mix well.
  • Unwrap puff pastry on wax paper and put meat mixture on one pastry. Top with second pastry. Press ends of pastry to "close" edges and fold so that the corners will not open during cooking.
  • Wrap cookie sheet in tin foil and spray with cooking spray. Flip pastry onto foiled pan and put in the oven. Bake for 30 minutes or until pastry is golden brown. Let set for 5 minutes before serving.

2 medium (2-1/2" dia)s onions, chopped
1 (28 ounce) can diced tomatoes with herbs, undrained
2 cups elbow macaroni
1 cup frozen corn
1 green bell pepper, chopped
2 tablespoons minced garlic
1 tablespoon soy sauce
1 tablespoon chili powder
1 teaspoon Italian seasoning
1 pinch ground black pepper to taste
2 cups shredded Mexican cheese blend

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Generously grease an 8-cup baking dish. Place baking dish on a cookie sheet.
  • Heat a large saucepan over medium-high heat. Cook and stir beef and onions until beef is browned and crumbly, 5 to 7 minutes. Drain off fat.
  • Drain liquid from canned tomatoes into a 4-cup measuring cup, adding water if needed, to make 2 1/2 cups of liquid. Add juice, tomatoes, macaroni, corn, bell pepper, garlic, soy sauce, chili powder, Italian seasoning, and pepper to the beef mixture; bring to a boil.
  • Pour 1/2 of the beef mixture into the prepared baking dish. Sprinkle with 1 cup of Mexican cheese, add remainder of beef mixture, and sprinkle with remaining cheese.
  • Bake, covered, in the preheated oven for 30 minutes. Remove cover and bake for another 15 minutes. Remove from the oven and let sit for 10 minutes before serving.

Steps:
