1 cup quick-cooking grits
1 (16 ounce) package sharp cheddar cheese
1/4 cup butter, melted
2 eggs, slightly beaten

Steps:

  • Heat water and salt to boiling.
  • Gradually add grits and return to boiling.
  • Reduce heat.
  • Simmer uncovered, stirring for 5 minutes.
  • Remove from heat and allow to cool, slightly.

2 ¼ cups water
1 teaspoon salt
1 cup quick-cooking grits
1 (8 ounce) package processed cheese (such as Velveeta®), cubed
½ pound sharp Cheddar cheese, cubed
¼ cup butter
⅛ teaspoon garlic powder
2 eggs, beaten

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Butter a 9x12-inch baking dish.

8 slices bacon, cut into 1/2-inch pieces
1 onion, very thinly sliced
4 cups low-sodium chicken broth
2 cups coarse stone-ground grits
2 cups heavy cream
2 cups grated Monterey Jack cheese
Kosher salt and freshly ground black pepper

Steps:

  • In a heavy pot, cook the bacon over medium heat to render the fat, about 2 minutes.
