1 1/2 lb small (two-bite) Yukon gold potatoes, halved
4 teaspoons oil
2 tablespoons ranch dip mix (from 1-oz package)
1 jalapeño chile, seeded, finely chopped
4 slices cooked bacon, coarsely chopped
1 cup shredded Cheddar cheese (4 oz)

Steps:

  • Heat gas or charcoal grill. Cut 2 (18x12-inch) sheets of heavy-duty foil. Spray with cooking spray.

  • Bring up 2 sides of foil so edges meet. Seal edges, making tight 1/2-inch fold; fold again, allowing space for heat circulation and expansion. Fold other sides to seal.
  • Place packs on grill over medium heat. Cover grill; cook 12 minutes. Rotate packs 1/2 turn; cook 12 to 14 minutes longer or until potatoes are tender. Remove packs from grill, cut large X across top of each pack. Carefully fold back foil, and sprinkle potatoes with cheese. If desired, garnish with sliced jalapeño chile.

FOIL-PACKET POTATOES AND SAUSAGE

Foil-Packet Potatoes and Sausage image

My family enjoys camping and cooking over a fire. These hearty foil-packet potatoes turn out beautifully over a campfire, on the grill or in the oven at home. We sometimes leave out the sausage and serve the potatoes as a side dish. Either way, it's so easy, and the spuds can be served right from the foil pouch for easy cleanup. The recipe also tastes amazing when cooked in a Dutch oven. -Julie Koets, Elkhart, Indiana

  • Use fresh ingredients: The fresher the ingredients, the better the foil packs will taste. This is especially true for the potatoes, bacon, and vegetables.
  • Season the potatoes well: Don't be afraid to season the potatoes liberally with salt, pepper, and garlic powder. This will help them to develop a delicious flavor.
  • Don't overcrowd the foil packs: Make sure to leave some space between the ingredients so that they can cook evenly.
  • Seal the foil packs tightly: This will help to keep the moisture in and prevent the ingredients from drying out.
