1 (10 ounce) can prepared pizza crust (Pillsbury)
1/2 cup caesar salad dressing
6 tablespoons grated parmesan cheese
2 cups chopped cooked chicken
1 (6 1/2 ounce) jar marinated artichoke hearts, drained and chopped
1 1/2 cups shredded Fontina cheese
2 plum tomatoes, seeded and chopped

Steps:

  • Grease lightly a 12-inch pizza pan.
  • Roll dough out onto pan, starting at the center, press the dough (with your hands) out to the edge of the pan.
  • Bake at 400 degrees for 6-8 minutes or until the crust begins to dry.
  • In a bowl, add the salad dressing and Parmesan cheese; stir to combine.
  • Take the partially baked pizza crust out of the oven.
  • Spread the dressing mixture over the crust (We liked more dressing than the original recipe called for so I doubled the amounts. You don't have to use it all if it is too much for your liking.) Top with the chicken and artichokes.
  • Sprinkle with fontina and top with the tomatoes.
  • Season with salt and pepper if desired.
  • Place back in the oven and bake 15-20 minutes or until the cheese is melted and crust it golden brown.
  • Cut into wedges to serve.

Yield Makes 4 servings

Number Of Ingredients 10

Olive or vegetable oil cooking spray
2 boneless, skinless chicken breasts (4 ounces each), thinly sliced
1/4 teaspoon dried oregano
4 ounces goat cheese
1/2 cup nonfat ricotta
1 whole-wheat pizza crust (12 inches)
1 cup rinsed and drained canned artichoke hearts, halved
2 large plum tomatoes, diced
2 tablespoons grated Parmesan
1 tablespoon fresh oregano

Steps:

  • Set oven to broil. Lightly coat a large broiler pan with cooking spray. Sprinkle chicken with dried oregano; season with salt and pepper; place chicken in pan. Broil 2 minutes per side. Remove pan from oven; set oven to 450°F. Mix goat cheese and ricotta in a bowl; spread evenly over pizza crust, leaving a 1-inch border. Top with chicken, artichokes, and tomatoes; sprinkle with Parmesan. Bake until Parmesan turns golden, about 8 minutes. Sprinkle with fresh oregano and serve.

Tips:

  • Use high-quality ingredients: The better the quality of your ingredients, the better your pizza will taste. Opt for fresh, in-season vegetables, a flavorful cheese blend, and a high-quality chicken.
  • Don't overcrowd the pizza: Too many toppings can make the pizza soggy and prevent it from cooking evenly. Add just enough toppings so that each slice has a good balance of flavors and textures.
  • Bake the pizza at a high temperature: This will help to create a crispy crust and prevent the toppings from becoming overcooked. For a thin crust pizza, bake at 450°F for 10-12 minutes. For a thicker crust pizza, bake at 425°F for 15-18 minutes.
  • Let the pizza cool for a few minutes before slicing: This will help to prevent the cheese from becoming too runny and the toppings from falling off.

Conclusion:

This cheesy chicken and artichoke pizza is a delicious and easy-to-make meal that is perfect for any occasion. With its crispy crust, flavorful toppings, and gooey cheese, this pizza is sure to be a hit with everyone who tries it. So next time you're looking for a quick and easy meal, give this recipe a try. You won't be disappointed!
