It is very good and combines the creamy texture of the cheese sauce with the crunchy texture of the corn flakes. It is a standby meal and easy to make, freeze, and bake at a later date. You can freeze it up to 6 months. If frozen, bake uncovered for 1 hour.

1 bunch broccoli, cut into chunks - or more to taste
1 (3 pound) cooked rotisserie chicken, meat removed from bones and chopped
2 (10.75 ounce) cans cream of chicken soup

¼ cup lemon juice
1 teaspoon curry powder
salt and ground black pepper to taste
1 cup shredded Cheddar cheese
1 cup crushed corn flakes cereal

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Spray a 9x13-inch baking dish with cooking spray.
  • Place broccoli into a microwave-safe dish with a lid, pour in a small amount of water, cover, and cook on high in microwave until broccoli is steaming and bright green, 2 to 3 minutes. Carefully remove lid and spread broccoli into the bottom of the prepared baking dish. Spread cooked chicken in a layer over the broccoli.

This Cheesy Chicken Broccoli Curry Casserole is an updated version of a casserole I made years ago.

4 boneless, skinless chicken breasts, cut into lengthwise strips
1 tsp. poultry season
1 tsp dried thyme
water or chicken stock to cover the chicken while cooking. (see notes)
6 cups bite-sized broccoli pieces
1 cup mayo
1 cup sour cream
1 T lemon juice (see notes)
2 tsp. sweet curry powder
1 tsp. hot curry powder (Use any combination of curry powders you prefer.)
3 cups grated Three Cheese Blend (Use less cheese if you prefer of course.)
1/4 cup finely grated Parmesan cheese
salt and fresh-ground black pepper to taste

Steps:

  • Preheat the oven to 375F/190C. Spray a 9" x 13" glass or crockery casserole dish with non-stick spray.
  • Trim chicken breasts and cut each breast into 3 or 4 lengthwise strips. Put chicken strips into a saucepan, add water or chicken stock to cover by an inch or so, add the poultry seasoning and dried thyme, and bring the chicken to a low boil.
  • As soon as the water starts to boil, turn heat as low as it will go and cook the chicken for 12-15 minutes, or until it's firm.
  • Drain chicken into a colander placed in the sink. When it's cool enough to handle, use two forks to shred the chicken strips apart into bite-sized pieces. (If you have leftover rotisserie chicken you can use 4-5 cups of shredded rotisserie chicken instead of cooking your own chicken.)
  • While the chicken cooks, cut up enough broccoli to make 6 cups of bite-sized broccoli pieces. Put the broccoli into a large glass bowl or large 8-cup glass measuring cup, cover with cling-wrap, and microwave on high about 1 to 1 1/2 minutes. (You want the broccoli still quite crisp; it will cook in the oven.)
  • Drain the broccoli into a colander if it seems very wet. (You can steam the broccoli if you prefer, but be sure it is drained well before you add it to the casserole.)
  • Whisk together the mayo, sour cream, lemon juice, sweet curry powder, and hot curry powder in a small mixing bowl or 4 cup glass measuring cup. (If you're a curry fan, you might want to taste at this point and see if you want a little more curry powder.)
  • Then mix in 1 1/2 cups of the grated cheese blend and the Parmesan cheese.
  • Put the shredded chicken and barely-cooked broccoli into the casserole dish and gently stir so ingredients are evenly distributed. Use a rubber scraper to spread the cheesy creamy topping over the chicken/broccoli mixture. Top with the other 1 1/2 cups grated cheese.
  • Bake uncovered for 35-40 minutes, or until the casserole is bubbling hot and the cheese is nicely browned on top. Serve hot.

1 lb boneless chicken breast
1 bag frozen broccoli cuts
1 pkg S & B golden curry (mild or hot)
2 cans (14.5 oz each) Campbell cream of chicken soup
2 cups Kraft Mayo
1 pkg (20 oz.) Kraft Shredded Cheddar Cheese, divided
1 sleeve Ritz Cracker
2 cups water

Steps:

  • Boil chicken in large pot for 30 minutes or till it's done. When chicken is done put it in a large bowl for cooling. Keep water from chicken in the pot. Add frozen broccoli cuts and boil till its tender. Drain broccoli in a strainer.
  • Sauce: Put curry in a large bowl and add 2 cups of water. Microwave it for 1 minute. Mix curry thoroughly. Add cream of chicken soup, and mayo. Mix thoroughly. Shred chicken in bowl. Add broccoli cuts, half of the cheese, and half of the curry mix. Mix everything thoroughly.
  • Pour mixture in a large baking pan. Spread chicken mixer evenly in the pan. Pour remaining curry mix on top of the chicken. Spread evenly. Spread remaining cheese over the curry. Crush Ritz Crackers and put it on top of the cheese.
  • Preheat oven 375 degrees F. Put the casserole in the oven for 30 minutes, to heat thoroughly. Let the casserole sit for 5 minutes before serving.

Juice of 1 lemon
1 teaspoon curry powder

  • Preheat the oven to 350 degrees F. Butter a 2 to 3 quart baking dish.

2 teaspoons ground coriander
2 teaspoons smoked paprika

1 pound fresh broccoli

Steps:

  • Mix cumin, coriander, paprika, turmeric, black pepper, salt, and cayenne together in a small bowl for the spice blend.

1/2 cup light sour cream
1 cup shredded reduced-fat sharp Cheddar cheese (4 oz)
1/3 cup shredded Parmesan cheese

Steps:

  • Heat oven to 350° F. Spray 8-inch square baking dish with cooking spray.
  • In 12-inch nonstick skillet, heat olive oil over medium heat. Add onion; cook 3 to 4 minutes, stirring frequently, until translucent. Add mushrooms and salt; continue to cook 4 to 6 minutes or until any liquid evaporates and mushrooms are brown. Add broccoli; cook 30 seconds to 1 minute or until bright green. Transfer mixture to large bowl.
  • Add rice to bowl. Stir to combine. Stir in chicken.
  • In 1-quart saucepan, melt butter over medium heat. Sprinkle flour over melted butter; add 1/4 teaspoon salt. Beat with whisk. Cook 1 to 2 minutes or until mixture turns light brown. Slowly beat in milk with whisk 2 tablespoons at a time until smooth and combined. Heat to boiling, stirring constantly. Continue to cook and stir 1 minute. Remove from heat; cool 5 minutes.
  • Slowly beat sour cream and Cheddar cheese into sauce mixture with whisk. Reserve 2 tablespoons Parmesan cheese; set aside. Beat remaining Parmesan cheese into milk mixture. Add to bowl with chicken and vegetables; stir to combine. Pour into baking dish; spread evenly.
  • Bake 20 to 25 minutes or until heated through. Top with remaining Parmesan cheese. Bake 5 minutes longer.

Here is the resulting recipe...Serve with hot rice or pasta if you want starch with your meal...Enjoy!

1 1/2 lbs boneless skinless chicken breasts, about 3 cups (steamed and cubed)
1 lb broccoli, steamed and chopped (frozen may be substituted, but steam it too)
1 cup light sour cream (Cabot preferred)
1 cup reduced-fat mayonnaise (Kraft preferred)
10 ounces cream of chicken soup, undiluted (98% fat free works, too)
1 tablespoon lime juice
1 tablespoon garlic, minced
2 cups low-fat cheddar cheese, shredded
salt, to taste (optional)
1/2 teaspoon white pepper

Steps:

  • Preheat oven to 350°; you'll need a 13 x 9 pan for this recipe.
  • In the 13 x 9 pan, spread out the broccoli; then layer the chicken atop the broccoli.
  • Combine the sour cream, mayonnaise, soup, lime juice, garlic and salt & pepper.
  • Spread this mixture over the broccoli/chicken; top with the cheddar cheese.
  • Cover with aluminum foil and bake in the preheated oven for 30 minutes.
  • Remove the foil and bake 15 minutes, more or less, until hot and bubbly.
  • TIP: you may serve this with hot rice or pasta if you want a starch with your meal.

6 boneless skinless chicken breasts (or less)
1/2 teaspoon pepper
1 1/2 lbs broccoli florets (roughly)
1 (10 ounce) can cream of chicken soup
1/2 cup mayonnaise
1 teaspoon lemon juice
2 teaspoons curry powder
1 1/4 cups shredded cheddar cheese

Steps:

  • Cook the chicken - pan fry, poach or broil - whatever is easiest.
  • Cut chicken into pieces same size as broccoli.
  • Sprinkle with the pepper.
  • Steam or boil the broccoli briefly.
  • Run broccoli under cold water.
  • Mix together the soup, mayo, lemon juice and curry.
  • Layer in 9 x 13 pan in this order: broccoli, chicken, soup mix, 1 cup of the cheddar.
  • Sprinkle with remaining cheddar.
  • Bake for about 15 minutes at 350 degrees.
  • Do not bake if you wish to freeze it.
