  • Preheat oven to 400˚F (200˚C).
  • Thoroughly wash the potatoes and dry them completely. Pierce the potatoes with a fork.

4 medium russet potatoes, scrubbed
¼ cup unsalted butter, melted
1 cup shredded Colby-Monterey Jack cheese
¼ teaspoon seasoned salt
⅓ cup crumbled cooked bacon
¼ cup sour cream
2 stalks scallions, thinly sliced

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Prick potatoes several times with a fork and place onto a baking sheet.
