The result: a delicious one dish crock-pot meal that was effortless to prepare! The rice was moist, well cooked, and amazingly cheesy. The chicken also turned out perfectly tender.

Tips:

  • For a crispy rice layer, use day-old rice. Freshly cooked rice will be too moist and will not brown as well.
  • Feel free to use any type of cooked chicken in this recipe. Rotisserie chicken, leftover chicken breasts, or even canned chicken will work well.
  • If you don't have canned diced tomatoes, you can use fresh tomatoes. Just dice them up and add them to the recipe.
  • For a spicier dish, add a teaspoon of chili powder or cayenne pepper to the recipe.
  • This casserole can be made ahead of time. Simply assemble the casserole and bake it for 30 minutes. Then, cover it and refrigerate it for up to 24 hours. When you're ready to serve, bake it for an additional 30 minutes.
