1 pkg gold and white frozen corn
2/3 c chopped zucchini
1/2 c chopped sweet red pepper
4 Tbsp chopped red onion
PARSLEY DRESSING
4 Tbsp cider vinegar
2 Tbsp vegetable oil
2 Tbsp chopped parsley
3 tsp sugar
1/2 tsp salt
1/2 tsp chili powder
1/4 tsp pepper

Steps:

  • 1. Cook corn according to pkg directions and drain. While corn is cooking,whisk dressing ingredients together
  • 2. Combine corn, zucchini, red pepper and onion in bowl. Pour on dressing. Toss. Refrigerate covered.
