I love to play 'Iron Chef' sometimes with what I have in my fridge and pantry. I came up with this chicken recipe using yummy melty fontina cheese and my favorite ingredient, chipotle peppers in adobo sauce!! I hope you enjoy!

1 lb boneless skinless chicken thighs
2 tablespoons light olive oil
1 cup chopped white onion
2 garlic cloves, crushed and chopped
1 (7 1/2 ounce) can chipotle chiles in adobo (use 2 peppers out of the can-chop using food-prep gloves)
1/2 cup honey barbecue sauce
1 cup Fontina cheese, shredded (or cubed)
1/4 cup heavy cream
1 teaspoon fresh lime juice
1/4 cup fresh cilantro, chopped

Steps:

  • Preheat oven to 375 degrees F.
  • Rinse and dry your thighs and place them in a glass baking dish.
  • Heat the oil in a medium skillet on medium heat and saute the onions and garlic until soft (about 3 minutes).
  • Stir in the adobo peppers and saute for 2 more minutes turning the heat down to medium-low.
  • Stir in the BBQ sauce and fontina. Stir and melt the cheese with the sauce (about 4 minutes).
  • Stir in the cream until blended then stir in the lime juice and blend well.
  • Remove skillet from heat and pour sauce over the chicken thighs.
  • Bake for 45 minutes or until chicken is no longer pink and juices run clear.
  • Remove chicken from the oven to a serving platter and top with the fresh cilantro then serve!

4 slices smoked bacon, diced
2 pounds boneless and skinless chicken thighs (approximately 8 medium size thighs)
1/2 teaspoon coarsely ground black pepper
1 teaspoon salt, divided
1/4 teaspoon dried thyme
1 teaspoon granulated garlic
1 tablespoon oil
2 large carrots, cut in 1/4" slices on the diagonal
1/2 medium size sweet yellow onion
1/2 cup balsamic vinegar
4 tablespoons chipotle sauce
2 tablespoons tomato sauce
2 - 1/2 cups water, divided
2 cups half and half
1 tablespoon chicken bouillon granules
1 - 14.75 ounce can cream style corn
1 cup white cornmeal
2 teaspoons granulated sugar
1 tablespoon butter
1/2 cup sour cream
2 medium size avocadoes, peeled, seeded and mashed
1/2 teaspoon freshly squeezed lime juice
4 tablespoons grated Parmesan cheese
2 tablespoons of chopped cilantro

Steps:

  • Preheat oven to 400 degrees. Place diced bacon into large frying pan over medium high heat. Fry bacon until browned. Remove bacon with a slotted spoon; set aside. Reserve drippings. Place chicken on a cutting board. Trim fat; cut each into 6 pieces. Place chicken in a large bowl and sprinkle with pepper, salt, thyme, garlic and oil; toss to coat. Place chicken into hot pan with the drippings. Fry over medium high heat for 10-12 minutes, browning all sides. Transfer chicken to a non-stick baking dish. In the same frying pan, sauté carrots until tender crisp. Add onions and sauté until slightly wilted. Transfer to the baking dish. Combine vinegar, chipotle sauce, tomato sauce and 1/4 cup of the water in a bowl. Pour mixture over contents of the baking dish and stir. Place into preheated oven. Cover and bake for 30 minutes, stirring two or three times. Remove from the oven, stir in the remaining 1/4 cup water if mixture seems dry and rest for 5 minutes. While the chicken is cooking, place 2 cups of water, half and half, cream style corn and chicken bouillon in a large saucepan. Bring to a gentle boil, and add cornmeal in a steady stream, whisking briskly. Reduce heat to medium low, add butter and stir frequently while cooking for the next 5 minutes; cover with a splatter screen if needed. Just before serving, stir in sour cream. Remove from heat, cover and keep warm. Add a bit of additional half and half or water to thin polenta if needed. Serve as soon as possible. Mash avocadoes in a medium size bowl. Add lime juice and remaining 1/2 teaspoon salt; mix to combine, set aside. To serve, ladle about 3/4 cup of polenta into the bottom of each of 6 shallow bowls. Sprinkle with 2 teaspoons of grated Parmesan cheese, top with 8 pieces of the chicken and a bit of the sauce drizzled over. Spoon a dollop of the avocado onto the center. Garnish with a sprinkling of cilantro. Serve immediately.

1 chipotle chile in adobo, diced fine
1 tablespoon of the adobo sauce
1/4 cup brown sugar
2 tablespoons fresh cilantro, fine chopped
1/2 teaspoon chili powder
1 teaspoon garlic, minced
1 teaspoon kosher salt
1/4 teaspoon ground black pepper
1 cup polenta or 1 cup yellow cornmeal
2 cups milk
2 cups water
5 ounces white cheddar cheese
1 teaspoon kosher salt
1/2 teaspoon fresh ground black pepper
1/2 cup sour cream
1 tablespoon mayonnaise
1 tablespoon lime juice
1/2 teaspoon garlic, minced
1 tablespoon cilantro, chopped fine
1 scallion, chopped fine
salt
pepper

Steps:

  • Chicken -- mix all the marinade ingredients in a large baggie, add the chicken and just let it marinade all day. At least 4 or more, up to 24 hours.
  • Make the Cilantro Sour Cream Sauce -- Add the sour cream, mayo, lime, garlic, cilantro, scallion, salt and pepper. Mix well and transfer to a small bowl, cover and chill. This can be made several hours in advance.
  • Make sure you let the chicken come to room temperature before grilling. You can grill them either outside or even on a grill pan. They should take (depending on the size) 5 minutes approximately per side. Remove to a plate and cover to let set before slicing to let the juices re distribute.
  • Polenta -- as the chicken cooks, make this great side dish. I follow the recipe on the box. But for the most part, bring the water and milk to a light boil, medium high heat add the polenta. Reduce to medium low and cook 15-20 minutes until creamy stirring every few minutes. Add the cheese a little cilantro as a garnish if you want and it is done. If you want, purchase quick cooking polenta, just use 1/2 water and milk according to directions and at the end add the cheese and cilantro if desired. Any brand you pick will work just fine.
  • Plate the polenta and top with a chicken breast thin sliced and a dollop of the Cilantro cream. It is perfect.
  • A nice green salad or you can make market vegetables. Use what is fresh. Corn on the cob is great, so are local beans.

Tips:

  • For a spicier dish, use more chipotle peppers or sauce. Adjust the amount of chipotle to your own taste preferences.
  • If you don't have chipotle peppers, you can substitute chili powder or cayenne pepper. However, chipotle peppers have a unique smoky flavor that can't be replicated with other spices.
  • To make the chicken more flavorful, marinate it in the chipotle sauce for at least 30 minutes before cooking. This will allow the flavors to penetrate the chicken.
