CHEESY CREAMED SPINACH CASSEROLE

Cheesy Creamed Spinach Casserole image

I found this recipe in our local grocery store's (Hannaford) sale circular. I plan on making this as one of my side dishes on Easter Sunday so posting on Zaar for safe keeping. The only changes I will make with the recipe is in place of the canned spinach, I will be using 2 10 oz. boxes of frozen chopped spinach that I will defrost and squeeze dry. I will probably also double the recipe because we are all spinach lovers here.

CHEESY CREAMED SPINACH MADELEINE

Cheesy Creamed Spinach Madeleine image

This is my Mom's recipe and is a staple at every holiday gathering. She calls it Spinach Madeleine -- we just call it great. You can "heat" it up by using jalepeno cheese or adding jalepeno peppers, which is how my mom usually makes it. Great any time -- not just holidays.

Time 50m

Yield 5-6 serving(s)

Number Of Ingredients 11

2 (10 ounce) packages frozen chopped spinach
4 tablespoons butter
2 tablespoons flour
1/4 cup white onion, chopped
1/2 cup evaporated milk
1/2 cup reserved water, liquid from cooking the spinach
1/2 teaspoon black pepper
3/4 teaspoon garlic salt
3/4 teaspoon celery salt
6 ounces processed cheese (I usually by Kraft but you could also use Velveeta)
1 teaspoon Worcestershire sauce

Steps:

  • Preheat oven to 350 degrees.
  • Cook spinach according to package directions, drain and reserve liquid.
  • In large saucepan, melt butter over low heat.
  • Add onion, cover and cook slowly until softened.
  • Add flour, blending until smooth, and cook about 1 minute.
  • Slowly add evaporated milk and reserved liquid from spinach, stirring constantly.
  • Cook until thickened and smooth.
  • Add seasonings and cheese, stir.
  • Add spinach and mix well.
  • Place in buttered casserole dish and bake for approximately 30 minutes until hot and bubbly.

Tips:

  • Choose fresh spinach: Fresh spinach has a vibrant green color and crisp texture. Avoid wilted or yellowed spinach, as it may be bitter and less nutritious.
  • Wash spinach thoroughly: Before cooking, rinse spinach thoroughly under cold water to remove any dirt or debris.
  • Cook spinach quickly:Spinach cooks quickly, so avoid overcooking it. Overcooked spinach will become limp and lose its nutrients.
  • Use a large skillet or pot: Spinach tends to wilt down significantly during cooking, so it's important to use a large enough skillet or pot to prevent overcrowding.
  • Season spinach to taste: Spinach has a mild flavor, so feel free to season it with salt, pepper, garlic, onion, or other herbs and spices to your liking.
  • Serve spinach immediately: Creamed spinach is best served immediately after cooking, while it is still hot and creamy.

Conclusion:

Creamed spinach is a delicious and versatile side dish that can be enjoyed with a variety of main courses. It's easy to make and can be tailored to your own taste preferences. Whether you like it simple or loaded with cheese and other add-ins, creamed spinach is sure to be a hit at your next meal. So next time you're looking for a quick and easy side dish, give creamed spinach a try!
