Cheese and bacon liven up plain green beans. This dish can be served immediately after preparing, but I often refrigerate it overnight to let the flavors blend together, then reheat it in a 350 degrees F (175 degrees C) oven until heated through.

1 cup water
1 pound sliced fresh mushrooms
¾ cup chopped onion
¾ teaspoon ground black pepper

Yield 6

Number Of Ingredients 8

1 1/2 pounds fresh green beans
2 Tablespoons olive oil
1 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon garlic salt
1/3 cup grated Parmesan cheese
1/2 cup shredded Mozzarella cheese
1 teaspoon parsley

Steps:

  • Preheat your oven to 350 degrees
  • Wash your green beans, getting rid of any leaves or long stems. I like to cut off the ends of mine.
  • Lightly grease a 9 x 13 inch pan and lay your green beans down in the pan. It's okay that they over lap or stack on top of each other.
  • Drizzle 2 Tablespoons of olive oil over your green beans.

  • Top green beans with 1/2 cup Mozzarella cheese and sprinkle with parsley.
  • Bake for 15 minutes or until beans are cooked through and cheese begins to bubble.

Tips:

  • Blanch the green beans: Blanching the green beans helps to preserve their color and crispness. To blanch the green beans, bring a large pot of salted water to a boil. Add the green beans and cook for 2-3 minutes, or until they are bright green and tender. Drain the green beans and immediately transfer them to a bowl of ice water to stop the cooking process.
  • Make the cheese sauce: While the green beans are blanching, make the cheese sauce. In a medium saucepan, melt the butter over medium heat. Add the flour and cook for 1 minute, or until the mixture is smooth and bubbly. Slowly whisk in the milk and bring to a simmer. Reduce heat to low and simmer for 5 minutes, or until the sauce has thickened. Add the cheese and stir until melted and smooth.
  • Combine the green beans and cheese sauce: Add the blanched green beans to the cheese sauce and stir to coat. Season with salt and pepper to taste.
