2 (16 ounce) packages frozen cubed hash brown potatoes, thawed
2 (10.5 ounce) cans cream of chicken soup
1 (16 ounce) package shredded Cheddar cheese
1 pint sour cream
½ cup melted butter
½ cup finely chopped onion
1 teaspoon salt
½ teaspoon ground black pepper
1 sleeve buttery round crackers (such as Ritz®), crushed
½ cup melted butter

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a glass 9x13-inch baking pan.
  • Combine potatoes, cream of chicken soup, Cheddar cheese, sour cream, 1/2 cup melted butter, onion, salt, and pepper together in a bowl; spread into the prepared baking pan. Mix crushed crackers and 1/2 cup melted butter together in a bowl and sprinkle over potato mixture.

2 (10.75 ounce) cans cream of chicken soup
2 cups sour cream
1/3 cup onions (chopped)
1/4 teaspoon salt
1/8 teaspoon pepper
2 cups shredded cheddar cheese (divided)
2 cups Ritz crackers (or crushed corn flakes)
1/2 cup butter (melted)

Steps:

  • Lightly grease a 9 x 13 inch pan with non stick cooking spray.
  • Place half of the bag of hashbrowns in the prepared pan.
  • In a medium bowl combine the soup, sour cream, onions, and salt and pepper.
  • Gently spoon half of this mixture over the hashbrowns in the pan.
  • Sprinkle 1 cup of cheese over the soup mixture.
  • Then add the remainder of the hashbrowns on top, and spoon over remaining soup mixture and the other half of cheese.
  • Crush the Ritz crackers and combine with the melted butter. Sprinkle over the top of the casserole.
  • Bake at 350 degrees for 35 to 40 minutes.

2 - 21/2 c cooked cubed chicken breast
1 pkg (26 - 30 ounce) bag - shredded hashbrowns, thawed
2 - 14.75 oz cream of chicken soup - or 1 cream of chicken and 1 cream of mushroom ( that's what i use ) or use a 26 ounce can
1/2 c milk
3/4 c cream
2 c ( 8 ounces ) shredded, cheddar cheese
6 Tbsp butter, melted
1 - 16 oz broccoli flourets, thawed
1 tsp poultry seasoning
2 Tbsp dry minced onions
2 tsp salt or to taste
1 1/2 tsp pepper
1 1/2 oz french fried onion, crushed - optional
1/2 lb bacon, cooked, and crumbled - optional - i made this 2 times in the past week. the second time i added bacon...delicious either way.

Steps:

  • 1. Preheat oven to 400 degree F. Spray a 9 x 13 deep baking pan or dish with non stick cooking spray. Set aside. In a bowl, mix soups, salt, pepper, poultry seasoning, onion flakes, butter, 1 1/2 cups cheese, milk and cream.
  • 2. In a large bowl; toss together the broccoli, chicken and hash browns.
  • 3. Pour the soup mixture over the chicken mixture and blend well. Pour mixture into prepared baking dish, and spread out evenly. Sprinkle with crushed french fried onions.
  • 4. Place in oven and bake for 1 hour to 1 hour and 15 minutes, making sure hash browns and broccoli is thoroughly cooked. Sprinkle remaining cheese evenly.

3 tablespoons butter
1 large yellow onion, chopped
1/4 cup all-purpose flour
1 1/2 cups low-sodium chicken broth
1 cup milk
1 1/2 teaspoons salt
1/2 teaspoon pepper
1/2 teaspoon dried thyme
2 cups sharp cheddar cheese, shredded (8 ounces)
26 ounce bag frozen shredded hash browns
1/2 cup light sour cream
3 cups cornflakes or fried onions, lightly crushed
2 tablespoons butter, melted

Steps:

  • Melt the butter in a large pot over medium heat. Add the onion and cook until the onion is softened and translucent, about 5 to 6 minutes. Stir in the flour and cook, stirring constantly, for about a minute. Combine the chicken broth and milk in a liquid measure and slowly whisk in the mixture. Add the salt, pepper and thyme.
