Steps:
- 1. Preheat oven to 350º. Mix dry cake mix with 1 egg and 1/3 cup of oil until crumbly. Reserve 1 cup of mixture. Pat into 9x13 baking dish; set aside.
- 2. In a medium mixing bowl beat cream cheese until smooth. Add sugar until well blended.Add eggs, followed by lemon juice. Beat until creamy. Pour over prepared crust. Evenly sprinkle reserved crumb mixture over top.
- 3. Bake for 30 minutes. Cool completely before serving. Store leftovers in refrigerator.
Tips:
- For a richer flavor, use full-fat cream cheese and butter.
- Make sure the cream cheese and butter are at room temperature before mixing. This will help them cream together smoothly.
- Don't overmix the batter. Overmixing can make the bars dense and tough.
- Bake the bars until the edges are golden brown and the center is set. A toothpick inserted into the center should come out with just a few moist crumbs attached.
- Let the bars cool completely before cutting them. This will help them hold their shape.
- For a citrusy twist, add 1 tablespoon of lemon zest to the batter.
- For a sweeter bar, add 1/2 cup of sugar to the filling.
- For a more decadent bar, top with a layer of whipped cream or ice cream.
