Provided by Rachael Ray : Food Network

Categories     main-dish

Time 27m

Yield 4 servings

Number Of Ingredients 7

1 quart chicken stock (recommended: Kitchen Basics brand) available in paper box containers on soup aisle
2 tablespoons extra-virgin olive oil, 2 turns of the pan
2 cloves garlic, chopped
1 rounded cup Arborio rice
Salt and pepper
1 cup frozen peas
1/2 cup grated Parmigiano-Reggiano or Romano cheese, a couple of handfuls

Steps:

  • Place chicken stock in a small pot and warm over low heat.
  • Heat a medium sized skillet over medium heat. Add extra-virgin olive oil 2 turns of the pan, and garlic. Saute garlic 1 minute, then add Arborio. Toast the Arborio rice 2 minutes, then ladle in 1/3 of the stock. Bring to a bubble. Stir rice occasionally, allowing the rice to get starchy and the stock to cook into the rice. Add more stock when rice starts to become dry. Continue stirring and ladling broth until rice is al dente, 22 minutes. Stir in peas and cheese and season with salt and pepper, to your taste. Serve immediately.

Make and share this Cheesy Tuna, Rice and Peas recipe from Food.com.

Provided by Tebo3759

Categories     Lunch/Snacks

Time 15m

Yield 4 serving(s)

Number Of Ingredients 6

1 1/2 cups hot water
1 chicken bouillon cube
1 (10 ounce) can frozen peas
1 can cheddar cheese soup
1 (6 ounce) can tuna, drained and flaked
1 1/2 cups instant rice

Steps:

  • Dissolove bouillon in water in small saucepan.
  • Add peas and bring to a boil.
  • Add the soup, stir until smooth.
  • Add the tuna and bring to a boil again.
  • Stir in rice, cover, remove from heat and let stand 5 minutes.

Tips:

  • Use high-quality rice: Choose a medium or long-grain rice variety that cooks evenly and doesn't get mushy. Basmati, jasmine, and brown rice are all good options.
  • Soak the rice before cooking: Soaking the rice for 30 minutes before cooking helps to remove excess starch and results in more fluffy, separate grains.
  • Use aromatics to flavor the rice: Add aromatics like garlic, onions, and ginger to the pot along with the rice to infuse it with flavor. You can also use herbs like bay leaves or thyme.
  • Cook the rice in broth instead of water: Using broth instead of water adds more flavor to the rice. You can use vegetable broth, chicken broth, or beef broth, depending on the desired flavor.
  • Don't overcook the rice: Overcooked rice is mushy and unpleasant. Cook the rice according to the package directions and check it for doneness a few minutes before the recommended cooking time.
  • Fluff the rice with a fork before serving: Fluffing the rice with a fork before serving helps to separate the grains and make it light and fluffy.

Conclusion:

Cheesy rice with peas is a simple but delicious side dish that can be served with a variety of main courses. It's also a great way to use up leftover rice.
