4 pounds potatoes, peeled and sliced (about 5 large potaotes)
3 tablespoons all-purpose flour
1-1/2 teaspoons salt
1/4 teaspoon pepper
1-1/4 cups shredded reduced-fat cheddar cheese, divided
3 ounces reduced-fat Swiss cheese slices, finely chopped (3/4 cup), divided
2 medium onions, finely chopped
1-1/2 cups 2% milk
2 tablespoons minced fresh parsley

Steps:

  • Place a third of the potatoes in a shallow 3-qt. baking dish coated with cooking spray. In a small bowl, combine the flour, salt and pepper; sprinkle half over potatoes. Sprinkle with 1/4 cup of each cheese and half of the onions. Repeat layers. Top with remaining potatoes. Pour milk over all., Cover and bake at 350° for 50-60 minutes or until potatoes are nearly tender. Sprinkle with remaining cheeses. Bake, uncovered, 10 minutes longer or until cheese is melted and potatoes are tender. Sprinkle with parsley.

  • Preheat oven to 350°F (180°C).

2 tablespoons vegan butter
2 garlics, minced
2 tablespoons all-purpose flour
2 cups non-dairy milk
1 ½ cups low sodium vegetable broth
1 teaspoon salt
½ teaspoon pepper
⅓ cup nutritional yeast
½ medium yellow onion, sliced into rings
fresh parsley, chopped, to garnish

Steps:

  • Preheat the oven to 400°F (200°C).
  • Thinly slice the potatoes into rounds about ⅛-inch (3 mm) thick. Submerge in a large bowl of water to keep from browning and set aside.

1/2 cup chopped onion
1 teaspoon ground mustard
1 teaspoon salt

A delicious recipe from Southern to the Core cookbook received from BusyMomof3 in the 2011 Cookbook Swap, must admit to cooking this but I add ham and spring onion (scallion in place of onion) to the mix so consider this the base mix and delicious. On preparation time it can vary hugely dependig on if you use a mondolin or food processor or by hand and then depending on your knife skills, so I have tried to take a middle line here on the timing.

4 cups potatoes (thinly sliced, use a food processor or mandolin)
1/4 cup onion (chopped, for dietary purposes would use spring onion)
1 tablespoon flour
4 tablespoons butter (melted)
1 teaspoon salt (personally omit due to dietary reasons and use salted butter)
1/8 teaspoon pepper (personally would use more)
2 cups cheddar cheese (shredded)
1 1/2 cups milk (heated)

Steps:

  • Preheat oven to 350°F.

This is one of my favorite casseroles to make. I found the recipe in Southern Living mag. years ago and have kepted it in my cookbook to make when I am feeling cheesy. My family loves this.

3 lbs red potatoes, unpeeled
3 tablespoons margarine
1/2 cup green onion, chopped
1/2 cup red pepper, chopped
2 teaspoons minced garlic
1/4 teaspoon ground red pepper
2 cups heavy whipping cream
1 cup milk
3/4 teaspoon salt
1/4 teaspoon ground pepper
4 ounces swiss cheese, shredded
1/2 cup parmesan cheese, grated

Steps:

  • Slice potatoes to 1/8inch slices into a bowl and set aside.
  • Preheat oven to 350'.
  • In a medium to large pot, melt butter over medium heat.
  • Add green onions,red pepper and minced garlic, cook for 2 minutes.
  • Add whipping cream, milk,salt and pepper and stir well.
  • Add potatoes and bring to a boil, turn heat to low temp and cook for 13 minutes or until tender.
  • Spray a 11x7x1 1/2in.dish with Pam.
  • Add potato mixture to dish,sprinkle pamersan cheese and swiss cheese over potatoes.

  • Carefully watch the cheese to keep from browning to dark.
  • Let stand 10 minutes before serving.
  • Note:May add shredded cheddar cheese or favorite cheese, when applying cheese to casserole before baking.
  • Add alittle water to potatoes while boiling if necessary.
