Time 1h20m

Yield 3 Quarts

Number Of Ingredients 12

6 cups water
3 cups onions, diced
5 cups squash, diced (may be a combo of zucchini, yellow squash and summer squash, using at least half zucchini)
7 cups zucchini, sliced in thin half rounds (if using very small squash, full rounds)
3 -4 tablespoons butter
2 1/4 teaspoons leaves oregano, crumbled
1 garlic clove, minced
6 ounces sharp cheddar cheese, grated
1 (3 ounce) package cream cheese
3 tablespoons tamari
1/4 teaspoon black pepper or 1 pinch cayenne
salt

Steps:

  • Bring water, onion, diced squash, and butter to boil.
  • Cook, covered over medium heat until squash begines to break down and form a broth, about 45 minutes.
  • Add sliced zucchini, oregano, and garlic, and bring to a boil again.
  • Reduce heat to simmer, and continue cooking for 5-10 minutes or until the zucchini slices are slightly tender.
  • Turn heat down to low.
  • In a tightly covered blender, blend together 1 1/2 cups of the hot soup broth including some of the zucchini slices and the cheddar and cream cheese until smooth.
  • Add to the soup.
  • Turn off heat, add tamari, pepper and salt to taste.
  • Serve.

Tips:

  • Use fresh zucchini. Fresh zucchini has a more vibrant flavor and texture than zucchini that has been stored for a long time. If you can, buy zucchini from a local farmer's market or grow your own.
  • Choose the right type of cheese. There are many different types of cheese that can be used in cheesy zucchini soup, so choose one that you like. Some good options include cheddar, Parmesan, and Gruyère.
  • Don't overcook the zucchini. Zucchini is a delicate vegetable, so it's important to not overcook it. Otherwise, it will become mushy and lose its flavor.
  • Add some herbs and spices. Herbs and spices can help to add flavor to cheesy zucchini soup. Some good options include basil, thyme, oregano, and garlic powder.
  • Serve the soup with a side of crusty bread or crackers. This will help to soak up the soup and make it even more delicious.

Conclusion:

Cheesy zucchini soup is a delicious and easy-to-make dish that is perfect for a weeknight meal. It's also a great way to use up leftover zucchini. With its creamy texture and cheesy flavor, this soup is sure to be a hit with your family and friends.
