We LOVE these potatoes from Chef Mickey's restaurant at Walt Disney World. Boiling time for the potatoes is not included in either the prep or cook time.

Number Of Ingredients 6

1 cup milk
2 cups heavy cream
1/2 lb butter
1/2 lb grated fresh parmesan cheese
5 lbs idaho potatoes, peeled
salt and pepper, to taste

Steps:

  • Boil the peeled potatoes until they are tender.
  • Meanwhile in another pot bring to a boil the heavy cream, milk, and butter.
  • Strain the water from the potatoes and place them in a large mixing bowl. Add the boiling milk, butter, and cream. Whip until the potatoes are creamy and smooth.
  • Fold in the Parmesan cheese and mix well. Season with salt and pepper as needed.
  • Serve immediately.

2 pounds Yukon gold potatoes (about 5 cups), diced unpeeled
1/2 cup low-fat buttermilk
1/2 cup skim milk
4 tablespoons grated Parmesan
Salt
1 tablespoon unsalted butter

Steps:

  • Place potatoes in a large saucepan and cover with water. Bring to a boil, reduce heat and cook until tender, about 10 minutes.
  • While potatoes are cooking place buttermilk and milk into a small saucepan and cook over a very low heat until just warm. Be careful not to boil or milk will curdle.
  • Drain the potatoes, add the warmed milk and mash together to desired consistency. Stir in cheese and salt. Top with the butter and let it melt.

3 russet potatoes, sliced
4 tablespoons olive oil
salt, to taste
pepper, to taste
2 teaspoons garlic powder
2 teaspoons italian seasoning
1 teaspoon paprika
½ cup parmesan cheese, shredded
fresh parsley, chopped

Steps:

  • Preheat the oven to 400˚F (200˚C).
  • Cut potatoes in half, then slice.
  • Place the potatoes in a large bowl. Drizzle olive oil and toss to coat.
  • In a small bowl, mix salt, garlic powder, Italian seasoning, and paprika.
  • Sprinkle seasoning on potatoes and toss to coat.

1 teaspoon vegetable oil, or as needed
2 tablespoons freshly grated Parmesan cheese
½ teaspoon salt
½ teaspoon garlic powder
½ teaspoon paprika
¼ teaspoon ground black pepper
2 pounds red potatoes, halved
1 tablespoon vegetable oil, or as needed
¼ cup sour cream

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Spray a 9x13-inch baking pan or cast iron skillet with cooking spray; pour in about 1 teaspoon vegetable oil to coat the bottom.
  • Mix Parmesan cheese, salt, garlic powder, paprika, and black pepper together in a bowl.

2 tablespoons olive oil
1 teaspoon kosher salt
¼ teaspoon black pepper
½ cup grated Parmesan cheese
¼ teaspoon dried thyme leaves

  • Preheat an oven to 400 degrees F (200 degrees C).
