1 1/2 cups boiling water
2 cups frozen unsweetened sweet cherries
2 cans (8 oz each) crushed pineapple in juice, undrained
1/2 cup honey-nut cream cheese (from 8-oz container)
Leaf lettuce leaves, if desired

Steps:

  • In large bowl, dissolve gelatin in boiling water, stirring constantly. Stir in frozen cherries until thawed. Stir in pineapple.
  • Into ungreased 8-inch square (2-quart) glass baking dish or another serving dish, pour about half of the gelatin mixture. Refrigerate 30 to 45 minutes or until set.

1 can (20 ounces) unsweetened pineapple chunks
1 can (15 ounces) pitted dark sweet cherries
1 package (3 ounces) cherry gelatin
3 ounces cream cheese, softened
1/2 teaspoon sugar
2 tablespoons chopped pecans
1 drop almond extract
5 lettuce leaves

Steps:

  • Drain pineapple and cherries, reserving juices in a 2-cup measuring cup; add enough water to measure 2 cups. Set fruit aside., In a small saucepan, bring juice mixture to a boil over medium heat. Remove from the heat; stir in gelatin until dissolved. Cover and refrigerate until partially set. , In a small bowl, combine the cream cheese, sugar, pecans and extract. Shape into 3/4-in. balls.
