1 can(s) (14 ounce) fat-free sweetened condensed milk
1 can(s) (8 ounce) crushed pineapple, drained
1/4 c lemon juice
1 can(s) (20 ounces) lite cherry pie filling
1 (12 ounce) carton whipped topping, thawed

Steps:

  • 1. Mix sweetened condensed milk, pineapple and lemon juice in bowl. Add pie filling and whipped topping. Refrigerate until firm.

I already had a pretty serving bowl picked out for this creamy fruit salad and then I came across these cute mini coke glasses, so I used them instead. If you add a cherry on top and a straw, they look like mini milkshakes...but for these you'll need a spoon! I entered these cuties in the 2011 Texas Rice Festival cooking...

8 oz cream cheese, room temperature
1 can(s) sweetened condensed milk
1 Tbsp fresh lemon juice
1 can(s) cherry pie filling
1/2 c pineapple tidbits, drained
1/2 c mandarin oranges, drained
1/2 c finely chopped pecans
8 oz non-dairy whipped topping, thawed
cherries for garnish

Steps:

  • 1. Using an electric mixer, combine cream cheese, sweetened condensed milk and lemon juice until smooth.
  • 2. Using a spatula, gently fold in remaining ingredients.
  • 3. Garnish with cherries or as desired. Chill for at least an hour or until serving time (it will thicken as it chills).

  • Choose fresh and ripe cherries for the best flavor.
  • If you don't have fresh cherries, you can use frozen or canned cherries. Just be sure to thaw frozen cherries before using.
