TOMATO, MOZZARELLA AND CHERRY SALAD

Tomato, Mozzarella and Cherry Salad image

Provided by Alex Guarnaschelli

Categories     side-dish

Time 35m

Yield 4 to 6 servings

Number Of Ingredients 14

1/4 cup extra-virgin olive oil
3 tablespoons balsamic vinegar
2 tablespoons Dijon mustard
2 to 3 vine-ripe or heirloom tomatoes
1 pint cherry tomatoes
1 pint fresh Bing cherries, pitted and halved (or husk cherries, stemmed and halved)
1 tablespoon sugar
10 to 12 sprigs fresh tarragon, stemmed
8 sprigs fresh basil, stemmed
8 sprigs fresh flat-leaf parsley
1/2 cup finely grated Parmesan
2 to 3 tablespoons olive oil, or more as needed
Coarse sea salt
1 pound fresh mozzarella, cut into 12 slices

Steps:

  • Make the dressing: Whisk together the olive oil and balsamic with the mustard and 1 tablespoon cool water in a bowl. Set aside.
  • Make the salad: Place the tomatoes on a flat surface. Cut the smaller ones in half and the larger ones into slices or wedges. Arrange all the tomatoes and cherries in a single layer, flesh-side up, on a large serving platter or individual plates. Sprinkle them with the sugar.
  • "Herb" the mozzarella: Use a pair of scissors to coarsely cut the tarragon, basil and parsley into pieces and toss in a medium bowl with the Parmesan, olive oil and a pinch of salt. The herbs should feel slightly dampened and sticky from the olive oil. If not, add more olive oil by the tablespoon as needed. Press both sides of the mozzarella slices into the herb mix to coat them, then intersperse the cheese pieces amongst the tomatoes on the serving platter or plates.
  • Season the dish with salt and spoon all the dressing over the tomatoes and cheese.

Categories     side-dish

Time 20m

Yield 6 to 8 servings

Number Of Ingredients 7

1/4 cup olive oil
5 cloves garlic, finely minced
1 pint red grape tomatoes, halved lengthwise
1 pint yellow grape tomatoes, halved lengthwise
1 tablespoon balsamic vinegar
16 fresh basil leaves, chiffonade, plus more if needed
Salt and pepper

Steps:

  • In a small skillet, heat the olive oil over medium-high heat. Add the garlic and stir, lightly frying for about a minute and removing from the heat before the garlic gets too brown (it can be golden). Pour it into a mixing bowl and allow to cool slightly. Add the tomatoes, balsamic, basil and some salt and pepper to the bowl. Toss to combine, and then taste and add more basil if needed, and more salt if needed.

MOZZARELLA, TOMATO, AND BASIL SALAD

Mozzarella, Tomato, and Basil Salad image

This classic salad is even better when made at the height of tomato season -- August and September.

Provided by Martha Stewart

Categories     Food & Cooking     Salad Recipes

Time 15m

Number Of Ingredients 5

1 pound plum, beefsteak, or cherry tomatoes (or a combination), cored and sliced 1/4 inch thick
3/4 pound fresh mozzarella, sliced 1/4 inch thick
3/4 cup fresh basil leaves
Coarse salt and ground pepper
2 tablespoons olive oil, preferably extra-virgin

Steps:

  • Arrange tomatoes, mozzarella, and basil leaves in an alternating pattern on a large serving platter. Sprinkle with salt and pepper; drizzle with oil.

Tips:

  • Select ripe and flavorful tomatoes: Look for tomatoes that are bright red and have a firm texture.
  • Use fresh mozzarella cheese: Fresh mozzarella has a milky, creamy flavor that pairs well with the tomatoes and basil.
  • Use high-quality olive oil: Extra virgin olive oil has a fruity, peppery flavor that will enhance the salad.
  • Chop the ingredients evenly: This will ensure that each bite has a balance of flavors.
  • Season the salad to taste: Start with a small amount of salt and pepper and adjust to your liking.
  • Serve the salad immediately: This will prevent the tomatoes from becoming watery.

Conclusion:

This cherry tomato, mozzarella, and basil salad is a simple but delicious dish that is perfect for a summer meal. The fresh, juicy tomatoes, creamy mozzarella cheese, and fragrant basil are a perfect combination. This salad is also very easy to make, making it a great option for a busy weeknight meal.
