1 pint cherry tomatoes, halved
1/4 cup vegetable oil
3 tablespoons white vinegar
1/4 cup minced fresh parsley

2 garlic cloves, minced
1 tablespoon minced fresh basil

  • Heat 1 Tb. olive oil in a 12-inch skillet over medium-high flame until it just starts to smoke. Add tomatoes, and season with salt and pepper. Saute, shaking pan frequently, until tomatoes soften and skins just begin to wrinkle, about 2 minutes. Stir in the garlic and continue to shake the pan until garlic is fragrant. Off heat, stir in the basil and remaining 1 Tb. olive oil, then serve.

¼ cup vegetable oil
3 tablespoons cider vinegar
1 teaspoon dried parsley

2 pints cherry tomatoes
boiling water
1/4 cup red wine vinegar
2 green onions, sliced (including tops)
1/2 teaspoon dry basil
1/4 teaspoon oregano leaves
1 teaspoon garlic salt
1/4 teaspoon pepper
1/2 cup salad oil (may be part olive oil)

Steps:

  • Place tomatoes, a few at a time, in a wire strainer and immerse in a large pan of rapidly boiling water for about 15 seconds.
  • Immediately rinse tomatoes under cold water.
  • Slip off and discard peels and stems, and place tomatoes in a shallow container with a tight fitting lid In a small bowl, combine vinegar, onions, basil, oregano, garlic salt, pepper, and oil, beat well and pour over tomatoes.

I think I got the original idea for this recipe from a South Beach diet cook book, but have modified it throughout the years. This is a good snack to bring with you to work. When I don't have cherry tomatoes on hand, I sub two or three sliced roma tomatoes (with a bit of shredded mozzarella sprinkled on top instead of the chopped cheese stick). This makes a lot of "juice" if let sit for 30 mins or longer, so sometimes I'll serve this over a bed of romaine (it's my boyfriend's favorite "salad dressing"). I use dried herbs, but I'm sure fresh would be amazing! (I've tried starting several herb gardens over the years, but now that I am finally in a house and settled in one place, hopefully I'll be more successful!) Prep time includes 30 minutes for marinating.
