4 bone-in, skin-on chicken thighs

Yield 4 people

Number Of Ingredients 5

4 skin-on bone-in chicken breasts
1 1/2 TBSP Vegetable Oil
3/4 cup frozen orange juice concentrate zest of one orange
6 TBSP honey
Salt & Pepper

Steps:

  • Preheat the oven to 375 degrees. Liberally salt and pepper the chicken. Heat the oil in a large oven proof skillet over medium-high heat and sear the chicken, skin side only until brown and beginning to crisp (about 5 minutes) Meanwhile, make the orange glaze in a small saucepan, heat the OJ concentrate, zest, honey and salt and pepper (to taste) over medium heat and boil for 2 minutes. Remove from heat. Brush the chicken on both sides with the glaze and leave skin side up in the pan. Use all of the glaze. Transfer the pan to the oven. Bake for about 45-50 minutes or until internal temp reaches 160-170 degrees with an instant read thermometer, brushing glaze back on every 15 minutes. Let the chicken rest for 10 minutes on a cutting board. Remove chicken breast from the bone and slice meat on the bias. Transfer to a plate and drizzle with sauce.

Tips:

  • Select the right oranges: Use high-quality, sweet oranges for the best flavor. Look for oranges with a deep orange color and a thin, smooth skin.
  • Zest the oranges before juicing: The zest of the oranges contains a lot of flavor, so be sure to zest them before juicing. Use a fine grater or a microplane to get the zest.
  • Use fresh orange juice: Fresh orange juice is essential for this recipe. Do not use store-bought orange juice, as it will not have the same flavor.
  • Marinate the chicken: Marinating the chicken in the orange juice, soy sauce, and spices helps to tenderize the chicken and infuse it with flavor.
  • Cook the chicken over medium heat: Cooking the chicken over medium heat helps to prevent it from burning and drying out.
  • Add the orange sauce at the end of cooking: Adding the orange sauce at the end of cooking helps to prevent the sauce from burning.
  • Serve immediately: Chicken à l'orange is best served immediately after cooking, while the chicken is still hot and the sauce is still bubbling.

Conclusion:

Chicken à l'orange is a classic French dish that is both delicious and easy to make. By following these tips, you can make a perfect chicken à l'orange that your family and friends will love. The combination of sweet and savory flavors in this dish is sure to please everyone at the table.
