CHICKEN FETTUCCINE ALFREDO

Chicken Fettuccine Alfredo image

Classic and easy to make, this version of Alfredo doesn't use flour to thicken the sauce. Instead, it relies on a slight simmer and a heavy dose of cheese.

Provided by Food Network Kitchen

Categories     main-dish

Time 25m

Yield 4 servings

Number Of Ingredients 8

Kosher salt and freshly ground black pepper
12 ounces fettuccine
Olive oil, for tossing
12 ounces boneless, skinless chicken breast (about 2)
1 stick (8 tablespoons) unsalted butter
2 cups heavy cream
2 pinches freshly grated nutmeg
1 1/2 cups freshly grated Parmigiano-Reggiano

Steps:

  • Bring a large pot of water to a boil, and salt generously. Add the pasta and cook according to package directions until al dente (tender but still slightly firm). Drain and toss with a splash of oil.
  • Meanwhile, slice the chicken into 1/4-inch-thick strips, and lay them on a plate or a sheet of waxed paper. Season with salt and pepper.
  • Heat a large skillet over medium heat. Add 2 tablespoons of the butter. When the butter melts, raise the heat to medium-high and add the chicken in 1 layer. Cook, without moving the pieces, until the underside has browned, 1 to 2 minutes. Flip the pieces, and cook until browned and cooked through, 2 to 3 minutes more. Transfer the chicken to a medium bowl.
  • Reduce the heat to medium. Add the remaining 6 tablespoons butter. Scrape the bottom of the skillet with a wooden spoon to release any browned bits. When the butter has mostly melted, whisk in the cream and nutmeg and bring to a simmer, then cook for 2 minutes. Lower the heat to keep the sauce just warm.
  • Whisk the Parmigiano-Reggiano into the sauce. Add the chicken and cooked pasta and toss well. Season with salt and pepper. Serve hot in heated bowls.

Categories     Dinner, Main course, Supper

Time 25m

Number Of Ingredients 8

1 tbsp olive oil
4 skinless boneless chicken thighs, cut in half
300g fettuccine, or tagliatelle
1 tbsp butter
200ml double cream
½ a nutmeg, grated
100g parmesan
parsley, chopped, to serve

Steps:

  • Heat the olive oil in a non-stick frying pan over a medium high heat. Add the chicken thighs and fry for around 10 mins, turning half way, until they are golden brown and cooked through. Set aside to cool a little, then use two forks to shred.
  • Bring a pan of salted water to the boil and add the pasta, cook for 1 minute less that package instructions. Whilst the pasta is cooking, add the butter to the frying pan over a medium heat, scraping the bottom a little to get any of the browned bits. Tip in the cream along with the nutmeg and bring to a simmer. Add the chicken back to the pan.
  • Once the pasta is cooked, use tongs to transfer the pasta straight from the water into the frying pan with the cream mixture. Sprinkle most of the parmesan over and use the tongs to toss it all together, adding a splash of the pasta water if it looks a little stiff. Season well, then tip into bowls. Top with the remaining parmesan, a scattering of parsley, and black pepper.

This was the most moist chicken of the dump meals that I have had in the past 5 meals. I ran this for 3 1/2 hours. I checked as it cooked. The house smelt like broccoli the entire time.

  • Use high-quality ingredients. The better the ingredients, the better the Alfredo sauce will be. Look for fresh, organic ingredients whenever possible.
  • Don't skimp on the butter. Butter is essential for creating a rich, creamy Alfredo sauce. Use unsalted butter so you can control the amount of salt in the sauce.
  • Cook the chicken thoroughly. Chicken is a great addition to Alfredo sauce, but it's important to make sure it's cooked all the way through. Use a meat thermometer to check that the chicken has reached an internal temperature of 165 degrees Fahrenheit.
  • Don't overcook the sauce. Alfredo sauce is best when it's cooked just until it's thickened. Overcooking the sauce will make it grainy and clumpy.
  • Serve the sauce immediately. Alfredo sauce is best served immediately after it's made. If you need to make the sauce ahead of time, store it in the refrigerator for up to 3 days. Reheat the sauce gently over low heat before serving.

Conclusion:

Alfredo sauce is a delicious and versatile sauce that can be used on a variety of dishes. It's perfect for pasta, chicken, seafood, and vegetables. With a few simple ingredients and a little bit of time, you can make a delicious Alfredo sauce at home. So next time you're looking for a creamy, cheesy sauce, give Alfredo sauce a try.
