4 slices bacon
1 (16 ounce) package penne pasta
2 tablespoons extra-virgin olive oil
1 tablespoon unsalted butter
1 onion, vertically sliced
1 (8 ounce) package sliced fresh mushrooms

1 cup white wine
3 cups chicken stock, divided
