3 slices smoked pancetta
8 medium-sized spears asparagus, woody ends trimmed off
8 cherry tomatoes, halved
5 kalamata olives, stones left in

Handful basil leaves
Splash white wine

  • Slice the chicken into 3 finger size pieces, but ensure that you keep it as 1 piece (fan it out). This will help to cook the chicken much faster. Season with salt and pepper.

1 (6 ounce) package seasoned stuffing mix
1 3/4 cups water, divided
6 chicken breasts
4 slices Canadian bacon
1 (10 ounce) package frozen asparagus
1 cup frozen peas
1 (10 3/4 ounce) can cream of asparagus soup

Steps:

  • Preheat oven to 400.
  • Mix stuffing mix w/1 1/2 cups water. Divide evenly among 6 sheets of foil.
  • Spray foil with cooking spray before layering ingredients in order to keep stuffing from sticking.
  • Layer chicken, canadian bacon, asparagus and peas on top of stuffing.
  • Mix soup with 1/4 cup water.
  • Pour equally over each foil packet.

2 chicken breast fillets, sliced
10 asparagus spears, cut into 1/3rds (or more if you like them)
1/2 cup bacon, diced
1/4 cup olive (more or less depending on taste)
1 cup cherry tomatoes, halved or 1 cup chopped tomato
1 tablespoon butter
2 tablespoons olive oil
1 cup chicken stock, heated
couscous, to serve

Steps:

  • Heat oil and butter in large frypan, then add chicken pieces and cook until golden.
  • Throw in the bacon, olives (cut up if you wish), asparagus and 3/4 cup of the tomatoes. Cook until chicken is tender and bacon is crisp.

4 boneless, skinless chicken breasts (6 to 8 ounces each)
Salt and pepper
2 tablespoons olive oil
1 tablespoon chopped garlic
1 cup grated Asiago or Parmesan cheese
2 beefsteak tomatoes, cut into 1/8-inch-thick slices (8 slices)
8 spears asparagus, trimmed, halved lengthwise, then crosswise

Steps:

  • Preheat oven to 375 degrees. Using a sharp knife, split each chicken breast in half horizontally, then pound between 2 pieces of plastic wrap until about 3/8 inch thick (you should have 8 flattened pieces). Season on both sides with salt and pepper.
  • Heat oil in a large skillet over medium-high heat. Working in batches, saute chicken breasts and garlic until chicken is light brown on one side only, about 2 minutes; discard garlic.
