2 large boneless skinless chicken breast halves
1/4 cup lime juice
2 tablespoons canola oil
2 cloves garlic (minced)
1 1/2 teaspoons ground cumin
1 1/2 teaspoons chili powder
1/2 teaspoon salt

6 Roma tomatoes ((plum) seeded, cored and diced)
1 can (14.5-ounce) petite diced tomatoes (drained)
1/2 small red onion (finely chopped)
1/2 cup chopped fresh cilantro
1-2 large jalapeno peppers (seeded if desired, chopped)
2 cloves garlic (minced)
1 medium lime (juiced)
Salt and freshly ground black pepper (to taste)
2 large avocados (peeled and pitted)
3 tablespoons lime juice (approximately 2 large limes)
2 scallions (chopped)
2 cloves garlic (minced)
1/4 chopped fresh cilantro
Tabasco sauce (to taste)

Steps:

  • Combine chicken next 7 ingredients in a zipper-top bag. Marinate in the refrigerator for 3-4 hours. When ready to cook, preheat a grill or grill pan over medium-high heat. Cook 5-7 minutes per side or until cooked through to 165 degrees in the center. Let rest 3-4 minutes then cut in half horizontally and thinly slice.
  • Combine all ingredients in a bowl. Stir together and set aside.
  • Combine the flesh from the avocados, lime juice, scallions, garlic and cilantro in a food processor. Pulse until combined. Transfer to a bowl. Stir in the black beans.

1/4 cup canola oil, plus more for frying
4 corn tortillas, preferably white
Kosher salt
1 (15.5-ounce) can black beans, drained and rinsed
1 teaspoon ground cumin
1/4 cup low-sodium chicken broth
Freshly ground pepper
1 clove garlic, minced
1 tablespoon ancho chili paste or adobo sauce (from a can of chipotles in adobo)
1/4 cup fresh lime juice
2 teaspoons brown sugar
2 cups finely shredded green or red cabbage
1 bunch radishes (about 6), julienned
1/2 bunch fresh cilantro, roughly chopped
1/2 cup sour cream
1/2 rotisserie chicken, skinned and shredded into large pieces

Steps:

  • Heat 1/2 inch oil in a small heavy skillet over medium heat until shimmering. Fry tortillas one at a time until golden and crisp, 2 minutes per side. Drain on paper towels and sprinkle with salt.
  • Cool the oil slightly and discard all but 2 tablespoons. Add the beans and cumin and cook, stirring, 1 minute. Add the broth and cook, smashing the beans, until saucy and hot. Season with salt and pepper.

I first made these when trying to follow a dairy-free, gluten-free diet. The shells are corn (no wheat) and the avocado is meant to replace the cheese on traditional tostadas, but I still love these even now that I'm back to a "normal" diet because they taste so good. The flavor comes mostly from the base foods, so some people might find this bland and you may need to find a way to spice it up a bit, perhaps some hot taco sauce or some jalapeno slices. Also, I always cook for one, so that's what the recipe calls for (easily multiplied, however). These are great for lunch with a side of fresh, ripe fruit. P.S. Measurements are approximate, I'm an "eyeballer."

1/2 cup refried beans or 1/2 cup refried black beans
1 medium cooked chicken breast, chopped
1 -1 1/2 teaspoon honey
1/3 cup avocado, chopped
black pepper, to taste
red pepper flakes, to taste

Steps:

  • Heat the honey in a skillet, just until it starts melting a bit - do not let it burn.

1 medium head radicchio, sliced
1/2 cup fresh cilantro leaves

  • Make beans:
  • Heat olive oil in heavy medium saucepan over medium-low heat. Add onion and chilies; cook until onion is translucent, stirring occasionally, about 8 minutes.   • Add oil to depth of 1/4 inch to heavy medium skillet. Heat over medium-high heat until just beginning to smoke. Add tortilla and cook until crisp, abut 30 seconds per side. Drain on paper towels. Repeat with remaining tortillas.
  • Add 1/4 cup olive oil to salad; toss Season with salt and pepper. Add 1 tablespoon lime juice; toss. Rewarm beans over medium-low heat, stirring and thinning slightly with water. Place 1 tortilla on each plate. Spread with beans. Sprinkle with cheese. Top with salad, then chicken, salsa and cilantro.
