2 skinless, boneless chicken breast halves, cut into 1/2-inch pieces
1 tablespoon salted butter, or as needed
1 cup peeled and chopped apples
1 tablespoon cornstarch
1 cup chicken broth
1 cup coconut milk
2 teaspoons white sugar

4 chicken leg quarters
1 medium butternut squash (peeled, deseeded, and diced)
1 yellow onion (peeled and diced)
4 cloves garlic (peeled and minced)
1 " piece of ginger (peeled and minced)
4 Thai chili peppers (trimmed and minced)
2 tablespoons neutral cooking oil (divided)
4 cups chicken stock
1 cup coconut cream
2 teaspoons cumin powder
1 teaspoon cayenne powder (plus more to taste)
1 teaspoon turmeric powder (plus more to taste)
Salt and pepper to taste
Cooked rice
Fresh herbs (such as parsley or cilantro)
Pumpkin seeds

Steps:

  • In a wide braising pot. heat 1 tablespoon neutral cooking oil over medium-high heat. Pat the chicken dry and season all over with salt and pepper. Cook, skin-side down in batches, for 5-6 minutes until browned and crispy. Transfer to a plate. Drain off all but 1 tablespoon fat from the pot.
  • If the pot seems dry, add the remaining 1 tablespoon neutral cooking oil and turn the heat to medium heat. Add the diced onion and cook, stirring often, for 5-7 minutes until beginning to brown.

1 tablespoon cumin seeds
2 teaspoons black or brown mustard seeds
1/2 teaspoon ground coriander
1/4 teaspoon ground turmeric
1/4 teaspoon cayenne pepper
1 whole clove
2 tablespoons tomato paste
4 cups low-sodium chicken broth
3 fresh curry leaves (available at Penzeys) or 2 dried bay leaves
3 pounds bone-in chicken thighs, skinned
1 1/4 pounds kabocha or butternut squash, halved, seeded, peeled, and cut into 1-inch pieces (5 cups)
