Kosher salt
Juice of 1 lime
1 small clove garlic, finely chopped
1/2 cup packed fresh cilantro (leaves and tender stems), chopped
2 tablespoons vegetable oil
Freshly ground pepper
4 burrito-size tortillas
8 ounces pepper jack cheese, shredded (about 2 cups)
1 cup chopped rotisserie chicken, skin removed
2 tablespoons unsalted butter
1/2 small head iceberg lettuce, shredded (about 4 cups)
Mexican crema or sour cream, for topping

Heat 1 tablespoon butter in a large nonstick skillet over medium heat. Add 2 quesadillas and cook, turning once, until browned and crisp and the cheese is melted, 5 to 7 minutes. To improve your quesadillas, here are some tips:

Tips:

  • Use fresh ingredients: The fresher your ingredients, the better your quesadillas will taste. Use fresh chicken, vegetables, and cheese.
  • Season your chicken well: Before cooking your chicken, season it with a flavorful blend of spices. This will help to infuse the chicken with flavor and make your quesadillas more delicious.
  • Use a variety of cheeses: Don't be afraid to mix and match different types of cheeses in your quesadillas. This will create a more complex and flavorful filling.
  • Don't overcrowd the quesadillas: When assembling your quesadillas, don't overcrowd them with fillings. This will make them difficult to fold and cook evenly.
